When the electricity was out for a week during Hurricane Isabel in 2003, we had to empty the fridge and try to still eat healthfully. I created this simple carrot salad--it's nutritious, doesn't require refrigeration, and is vegan/vegetarian.

Tips:

  • Choose the right carrots: Look for carrots that are firm and have a deep orange color. Avoid carrots that are limp or have blemishes.
  • Peel and slice the carrots evenly: This will help them cook evenly.
  • Use a large skillet: You want the carrots to have enough room to spread out and cook evenly.
  • Cook the carrots over medium heat: This will help them cook through without burning.
  • Stir the carrots frequently: This will help them cook evenly and prevent them from sticking to the skillet.
  • Add the butter, brown sugar, and spices: Stir to coat the carrots.
  • Cover the skillet and cook the carrots until they are tender: This will take about 15 minutes.
  • Serve the carrots hot: They can be served as a side dish or as a main course.

Conclusion:

Hurricane carrots are a delicious and easy-to-make dish that can be enjoyed by people of all ages. They are a great way to use up leftover carrots, and they can also be made ahead of time and reheated. Whether you serve them as a side dish or as a main course, hurricane carrots are sure to be a hit.
