Time 35m

Yield 4 servings

Number Of Ingredients 13

Kosher salt
8 ounces egg noodles
2 tablespoons extra-virgin olive oil
3 sweet Italian turkey sausages (about 9 ounces), casings removed
1 onion, chopped
1 clove garlic, minced
3/4 cup chopped roasted red peppers
1 tablespoon paprika
1 cup low-sodium chicken broth
1/2 small head Savoy or green cabbage, sliced 1 inch thick
1/3 cup sour cream
2 tablespoons chopped fresh dill or parsley
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the egg noodles and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until crumbled and lightly browned, about 3 minutes. Add the onion; cook, stirring occasionally, until softened, about 3 minutes. Add the garlic, red peppers and paprika and cook, stirring, 1 minute. Add the chicken broth, cabbage and 1/2 teaspoon salt. Bring to a gentle simmer and cook until the cabbage is tender, about 4 minutes.
  • Add the noodles and sour cream to the sausage mixture. Cook, stirring, until well coated, about 30 seconds (do not boil). Add the reserved cooking water as needed to loosen. Stir in the dill and season with salt and pepper.

KILLER HUNGARIAN MEATLOAF

Killer Hungarian Meatloaf image

First the name is a goof. This meatloaf has nothing to do with my being Hungarian except that I am so it's an appropriate title. This is an adaption of another recipe I found elsewhere (heavily changed too I add). I happen to think it's killer. Hope you do too.

CLASSIC HUNGARIAN SAUSAGE

Provided by figaro8895

Categories     Pork

Time 30m

Yield 4 1/2 pounds, 1 serving(s)

Number Of Ingredients 11

3 lbs boneless pork butt, cut into large pieces
1 lb beef chuck, cut into large pieces
1 lb fresh pork fat, cut into large pieces
10 garlic cloves, peeled and crushed (about 2 Tablespoons)
1 cup water
2 tablespoons salt
1/2 tablespoon fresh ground black pepper
3 tablespoons Hungarian paprika
1 teaspoon saltpeter
1/4 teaspoon ground cloves
pork sausage casing, about 10 feet, 1 inch in diameter as for Polish sausage

Steps:

  • In a meat grinder, coarsely grind the pork, beef, and pork fat, in batches. Add all the remaining ingredients except the casings. Mix well and allow to sit while you clean the casings.
  • Rinse the casings thoroughly in cold water and run fresh water through them. Drain. Using a sausage machine, a KitchenAid with a sausage attachment, or a sausage funnel, fill the casings and tie them off into about 16-inch lengths. Do not fill them too tightly as they must have room to expand when they cook.
  • Hang the sausages in a home-style smoker and smoke them for about one hour. Do not allow the temperature of the smoker to go above 150.
  • Remove the sausages and hang over a stick or dowel. Put the stick in a cool place and position an electric fan so that it will blow directly on the sausages. Allow them to dry for two days. They are ready for use. Place them in the refrigerator, where they will keep well for about a week.

Tips for Making Hungarian Sausage Loaf:

- Use high-quality Hungarian sausage for the best flavor. - If you can't find Hungarian sausage, you can substitute another type of smoked sausage, such as kielbasa or bratwurst. - Be sure to brown the sausage well before adding it to the loaf mixture. This will help to develop the flavor and prevent the loaf from being greasy. - Don't overmix the loaf mixture. Overmixing can make the loaf tough. - Bake the loaf in a loaf pan lined with parchment paper. This will help to prevent the loaf from sticking to the pan and make it easier to remove. - Let the loaf cool completely before slicing and serving. This will help to keep the loaf from falling apart.

Hungarian sausage loaf is a delicious and easy-to-make dish that is perfect for a party or potluck. It is also a great way to use up leftover sausage. With its smoky flavor and moist texture, this dish is sure to be a hit with everyone who tries it. So next time you are looking for a new and exciting dish to try, give Hungarian sausage loaf a try.
