I haven't made this (yet), but at Publix grocery stores (FL, GA and SC), they have a feature called Apron's Simple Meals and they provide recipe cards and have a kiosk where they cook a different meal idea each week. - Season the chicken breasts with generous pinches of salt and pepper. In a large bowl, toss the zucchini, squash and onion with olive oil until evenly coated. Season with salt and pepper.

- Spread a piece of plastic wrap out over a cutting board and lay a chicken breast down. Fold a layer of the plastic wrap over it and pound the breast out until it's much thinner. Repeat with the other breast.
