Mexican corn, also known as elote, is a popular street food and side dish in Mexico and beyond. It's a simple yet flavorful dish made with fresh corn on the cob, grilled, roasted, or boiled, and then slathered with a creamy, tangy sauce made from mayonnaise, sour cream, cotija cheese, lime juice, and chili powder. The corn is often sprinkled with additional toppings such as cilantro, chopped onion, and crumbled cotija cheese before serving. This article provides three delicious recipes for Mexican corn:

1. **Classic Mexican Corn (Elote)**: This recipe showcases the traditional preparation of Mexican corn, with a creamy sauce made from mayonnaise, sour cream, cotija cheese, lime juice, and chili powder. The corn is grilled to perfection, resulting in a smoky, slightly charred flavor that complements the creamy sauce and tangy toppings.

2. **Mexican Corn with Avocado Crema**: This variation adds a rich and creamy avocado crema to the classic Mexican corn recipe. The avocado crema is made with ripe avocados, sour cream, cilantro, lime juice, and a touch of garlic. The combination of the avocado crema and the traditional toppings creates a luscious and flavorful dish.

3. **Mexican Corn Salad**: This recipe transforms Mexican corn into a refreshing and vibrant salad. The salad features grilled corn kernels, black beans, tomatoes, red onion, cilantro, and a tangy dressing made with lime juice, olive oil, and chili powder. It's a perfect side dish for summer barbecues or picnics.

On the streets of Santa Maria, California, street vendors (think an ice cream man with a 'trash can' full of hot corn on the cob instead of ice cream) roam the sidewalks selling corn on the cob for a dollar an ear! They slide a wooden skewer in one end for you to hold the corn. We crave it often and it's become a regular on our Saturday grill nights! Give it a try. You'll be surprised!
