4 medium or large pears (Bosc, Anjou or any other firmer variety suited for baking)
1/4 cup light brown sugar
1/4 teaspoon cinnamon ((optional))
1/8 teaspoon nutmeg ((optional))
1/2 lemon, juice only
2 teaspoons unsalted butter, (cut into 1/4" cubes)
1/8 teaspoon kosher salt
1/2 teaspoon vanilla extract

Steps:

  • Prep: Preheat oven to 400F. Line a 10"x7" or a 9"x9" baking dish with parchment paper if you prefer easier cleanup, or spray it with nonstick spray. If doubling the recipe use a 9"x13" baking dish or any other rimmed baking dish that will fit pears snugly to each other (see Note 1 at the bottom).
  • Peel & Core: If using a firm pear variety like Bosc, peel them. Remove the core with a melon baller or a small spoon. Leave the stems on for better visual appeal. If you're using softer pears like Anjou, keep the skin on to help them keep the shape as they bake.
  • Add toppings: Set the pears cut side up inside the pan. Drizzle with lemon juice to prevent browning. Sprinkle with brown sugar mixed with nutmeg and cinnamon (if using). Arrange the cubed pieces of butter on top of the pears. Drizzle with vanilla extract.
  • Bake for 30 minutes cut side up. Turn the pears cut side down. Spoon the caramel over the tops to prevent browning. Bake for another 20-50 minutes or until the pears are soft, and the caramel is thickened. The pears will shrink consierably if baked until the caramel is very thick.Bosc pears will take the longest to achieve the candied translucent look and caramelized taste. Other more delicate pear varieties will take less time to soften (Note 2 & 3).
  • Serve warm with vanilla ice cream, yogurt, sour cream, or a sprinkle of roasted walnuts or sliced almonds. Spoon the caramel over the pears.

3 medium pears, such as Anjou or Bartlett, quartered and cored
1/4 cup packed light-brown sugar
1 teaspoon pure vanilla extract

  • In a large skillet, melt butter over medium-high. Add pears, one cut side down, and cook until browned, then reduce heat to medium and cook 3 minutes. Turn pears to other cut side and cook 4 minutes. Add sugar and 1 tablespoon water, swirling pan to combine. Turn pears skin side down and cook until sauce is thickened slightly, 2 minutes. ½ cup all-purpose flour

8 cups peeled and sliced pears

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish or 9 inch square baking dish.

These are old-fashioned preserves like grandma used to make, with silky pieces of fruit in a sweet, jelled syrup. Perfect for hot biscuits, morning toast, on top of rice pudding, or stirred into plain yogurt. Add ginger, nutmeg, and/or cardamom. They're also nice with orange or lemon peel. You can use any amount of pears up to four pounds. Greater amounts don't seem to work as well. The recipe takes three days, but most of that time is hands-off.

4 lbs pears
4 lbs granulated sugar
1 lemon

Steps:

  • Day 1:.
  • Peel and core pears. Slice or dice into pieces of desired size.
  • Place pears in a large bowl and add an equal amount of sugar by weight (e.g. 4 lbs of pears = 4 lbs of sugar) Add juice of one lemon. Zest is optional, but adds a nice flavor. Stir gently to distribute sugar. Leave in refrigerator overnight. Stir several times to coat fruit with syrup.
  • Day 2:.
  • Place pears and syrup in a large pot. Bring to a boil, boil 10 minutes. Reduce heat to simmer and cook an additional 15-20 minutes until pears are translucent and candied. Turn off heat and leave pears in syrup overnight (no need to refrigerate). Place a clean dish towel under pot lid to prevent condensation.
  • Day 3:.
  • Remove pears from syrup, straining all syrup back into the pot. Bring syrup to a boil and cook to desired thickness (usually around 220 degrees). Test doneness by dropping syrup onto a frozen plate. It should gel almost immediately. When ready add pears back to syrup and remove from heat. Stir gently for approximately 10 minutes as preserves cool. This will keep the fruit distributed in the syrup and prevent it floating to the top of your jars.
  • Place preserves in sterilized jars leaving 1/2 inch of head space. If packing hot jars, process in boiling water bath for 5 minutes. For cold jars, process 10 minutes.
  • Leave jars undisturbed for 24 hours to cool and set. Enjoy!

  • In a small heavy skillet, melt butter. Add pecans; cook over medium heat until toasted, about 4 minutes. Sprinkle with sugar and cinnamon; cook and stir for 2-4 minutes or until sugar is melted. Spread on foil to cool., For dressing, in a blender, combine 1/2 cup pomegranate seeds, vinegar, mustard, honey, salt and pepper; cover and process until smooth. 8 c pealed and sliced up green baldwin pears. check your region for local.
2 c water
1 stick butter
2 c sugar
1/4 tsp nutmeg
1/2 tsp cinnamon, ground
1 large lemon juice, fresh

Steps:

  • 1. Peel and cut up a bunch of fresh pears. Measure them out to get 8 cups. Put them in a bowl and juice 1 fresh lemon on top of them. Stir til all are covered. Set aside.
  • 2. Melt butter in medium size stick proof material pan.
  • 3. Add sugar and water. Cook on med. high until all is blended and sugar is melted.
  • 4. Then add pears and spices. Cook down on med for about 1 hour stirring constantly until tender. If they are harder cook longer. If they are softer cook less. You just need to get them to the consistancy that you like.
  • 5. Put in Mason jars until 1" from the top. Cook in water bath to seal jars. Water bath is a super wide bottom pan that you fill about 2" tall in water. Then you put the mason jars down into already warm bath water and cook for approximately 10-15 min til it seals all jars.

Tips:

  • Choose ripe but firm pears for candying.
  • Use a heavy-bottomed saucepan to prevent scorching.
  • Bring the sugar syrup to a full boil before adding the pears.
  • Simmer the pears in the syrup for at least 30 minutes, or until they are tender but still hold their shape.
  • Remove the pears from the syrup and let them cool on a wire rack.
  • Roll the cooled pears in granulated sugar to prevent them from sticking together.
  • Store the candied pears in an airtight container in a cool, dry place.
