Time 17m

Yield 4 servings

Number Of Ingredients 6

1 cup all-purpose flour for dredging, seasoned with salt and pepper
1 1/2 to 2 pounds Chilean Sea Bass fillets
4 tablespoons butter/olive oil combination
1 cup dry white wine
1 tablespoon butter, softened
2 tablespoons drained capers

Steps:

  • Preheat oven to 200 degrees F.
  • Place flour for dredging in a shallow bowl. Coat each fillet with seasoned flour and shake off excess. Heat a large nonstick skillet over medium heat for 3 to 4 minutes. Add butter/olive oil combination. Add the fillets, without crowding. Increase heat to high and saute, shaking the pan from time to time, until the bottom of the fish is nicely browned, about 3 minutes. Turn and brown the other side. Remove fish to a plate and keep warm in the oven. Repeat with remaining fillets.
  • Deglaze the pan with white wine. Cook, stirring over high heat until reduced by about one-third. Stir in remaining butter and drained capers.
  • Plate fish and drizzle sauce around each fillet.

This is a truly flavorful dish with a lovely plate presentation. My mom and I experimented and made this for lunch. It came out so good I promptly went to the fish market so I could make it for my dinner guests that night. YUMMY!

Tips:

  • Choose the right sea bass fillets. Look for fillets that are firm to the touch and have a bright pink color. Avoid fillets that are slimy or have a strong fishy odor.
  • Pat the fillets dry before cooking. This will help to prevent the fillets from sticking to the pan.
  • Season the fillets with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Cook the fillets over medium heat. This will help to prevent the fillets from overcooking and becoming dry.
  • Baste the fillets with butter or olive oil while they are cooking. This will help to keep the fillets moist and prevent them from sticking to the pan.
  • Cook the fillets until they are opaque and flake easily with a fork. This will usually take about 3-4 minutes per side.
  • Serve the fillets immediately. You can serve them with a variety of sides, such as rice, vegetables, or potatoes.

Conclusion:

Cooking sea bass fillets is a quick and easy way to prepare a delicious and healthy meal. By following these tips, you can ensure that your sea bass fillets are cooked perfectly every time.
