1 Tbsp prepared mayonnaise
1 tsp dijon mustard
1 tsp freshly ground pepper
1 tsp pureed canned chipotles
1 tsp worcestershire sauce
1 Tbsp fresh lime juice
few drops of hot pepper sauce
1 tsp capers
5 anchovy fillets
8 clove garlic
1 c olive oil, extra virgin
2 Tbsp red wine vinegar
salt and freshly ground pepper
24 romaine leaves
2 oz parmesan cheese, shaved
baked or grilled croutons

Steps:

  • 1. Put all ingredients, except the oil and vinegar, in a food processor and process until blended. Slowly mix in the oil, then mix in the vinegar. if too thick, add a little water. drizzle romaine with the dressing and garnish with shaved cheese and croutons.

1 egg yolk (optional)
1 Tbsp garlic, minced or pressed
2 tsp dijon mustard
2 anchovy fillets, minced
1 1/2 tsp freshly ground black pepper, coarsely ground
1/4 tsp salt
1/2 tsp ground coriander
1/2 tsp ground cumin
1 tsp worcestershire sauce
2 tsp cold water
1/2 c extra-virgin olive oil
1/2 c canola oil
1 1/2 Tbsp sambal chili past (thai chili paste available in the asian section of grocery)
1/2 lemon, juiced
1/2 lime, juiced
3 Tbsp parmesan cheese, freshly grated

Steps:

  • 1. Combine the first 10 ingredients (egg yolk through water) in a food processor or blender. Process until smooth.
  • 2. With motor running, pour oils in a slow steady stream into dressing mixture. When all oil has been incorporated, add chili paste, lemon and lime juice, and parmesan cheese, Process until smooth.

1 teaspoon capers
5 anchovy fillets
8 cloves garlic
1 cup olive oil
2 tablespoon red wine vinegar
Salt and freshly ground pepper
24 romaine leaves
3 tablespoons olive oil
2 - ounce piece of parmesan cheese, shaved
Grilled croutons

Steps:

  • Put all ingredients, except the oil and vinegar, in a food processor and process until blended. Slowly mix in the oil, then mix in the vinegar. If too thick, add a little water.
  • Brush the leaves of romaine on both sides with the olive oil and season lightly with salt and pepper. Grill on each side for 30 seconds. Place 6 leaves on each plate, drizzle with the dressing and garnish with shaved cheese and croutons.

3/4 cup cooked black beans
3/4 cup roasted corn kernel
1/2 cup pumpkin seeds, from a mexican squash (pepitas)
1/2 cup Cotija cheese (Mexican white cheese) or 1/2 cup other queso fresco
multicolored tortilla chips, baked or fried,for garnish
1 egg yolk
1 tablespoon minced garlic
2 teaspoons Dijon mustard
2 anchovy fillets, minced
1 1/2 teaspoons fresh coarse ground black pepper
1/4 teaspoon salt
1/2 teaspoon ground coriander
