3 cups Water
2 tablespoons Tomato Paste
2 teaspoons Corn Syrup
1 tablespoon Cornstarch
1/2 teaspoon Salt
1 teaspoon Red pepper flakes
1/4 cup Vinegar

Steps:

  • Heat the oil in a large saucepan over medium heat. Sauté the sliced onions in oil for 5 minutes, until the onions are soft but not brown.
  • Add 3 cups of water, corn syrup, corn starch, tomato paste, salt, and pepper flakes and stir. Bring to a boil, then lower the heat and simmer for 45 minutes.

Steps:

  • Fill a large pot fitted with a steamer basket with 1 to 2 inches of water. Cover with a tightly fitting lid and bring to a boil. Add the hot dogs to the steamer basket, cover and steam until the hot dogs are heated through, about 5 minutes. Add the buns to the pot, cover and steam the buns until they are warm, about 1 minute.
  • Remove the buns from the pot and drizzle the inside of each with mustard. Top each with a hot dog, then nestle one pickle wedge on one side of each hot dog and 2 tomato wedges on the other side. Top with more mustard and relish, onions and peppers and sprinkle with celery salt.

hot dog buns
8 slice American cheese
1 tsp butter
fresh avocado, sliced for garnish, optional
ONION AND TOMATO RELISH
1 large sweet onion, sliced
1/2 large jalapeno, chopped with seeds
1 large vine ripe tomato, quartered
2 clove garlic (large), chopped
1 Tbsp Worcestershire sauce
1/2 c ketchup
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp ground cumin
1/4 tsp black pepper
1 Tbsp balsamic vinegar
2 Tbsp honey
1 tsp brown sugar
1 Tbsp olive oil

Steps:

  • 1. Heat a large frying pan with a tablespoon of olive oil.
  • 2. Add the onions, garlic, and jalapeno. Sauté until the onions are slightly golden.
  • 3. Add the tomato and continue to sauté until the tomato is soft.
  • 4. In a small bowl, combine the Worcestershire sauce, ketchup, vinegar, honey, salt, black pepper, garlic powder, ground cumin and brown sugar.
  • 5. Stir together and add to the pan.
  • 6. Simmer on low while the hot dogs finish cooking (5-10 minutes, stirring occasionally).
  • 7. Heat another large frying pan with a teaspoon of butter.

1 cup finely chopped red onion
6 garlic cloves, minced (or 1/2 teaspoon garlic powder)

2 tablespoons honey mustard
1 tablespoon water
1/2 teaspoon salt
1/2 teaspoon packed brown sugar

1 cup red seedless grapes, halved or quartered
8 hot dog buns, split and toasted

Steps:

  • For the tomato relish, fold a 36x18-inch piece of heavy foil in half to make an 18x18-inch square. In a medium bowl combine 2 cups of the tomatoes, the onion, garlic, oregano, mustard, water, salt, brown sugar and pepper. Place mixture in center of the foil. Bring up two opposite edges of the foil; seal with a double fold. Fold the remaining edges to enclose the mixture, leaving space for steam to build.
  • For a charcoal grill, place the foil packet on a grill rack directly over medium coals. Grill for 10 minutes; turn packet. Grill about 10 minutes more or until onion is tender. 6 cloves roasted garlic, coarsely chopped
3 grilled red peppers, peeled, seeded and diced

4-1/2 cups white vinegar
2-1/2 cups packed brown sugar
3 tablespoons canning salt
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
1 teaspoon ground nutmeg

Steps:

  • In a large saucepan, bring 8 cups water to a boil. Add tomatoes, a few at a time; boil for 30 seconds. Drain and immediately place tomatoes in ice water. Drain and pat dry; peel and finely chop. Place in a stockpot. Add onions and peppers., Place mustard and celery seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag.
