HOT YOGURT SOUP WITH BARLEY AND CILANTRO

Hot Yogurt Soup with Barley and Cilantro image

In the Middle East, yogurt is used in hot dishes as well as cold. To stabilize the yogurt so that it doesn't curdle when it cooks, you stir in a little cornstarch. This simple soup is both comforting and light, and it's good at any time of year. At this time of year I'd serve it warm but not simmering hot.

Provided by Martha Rose Shulman

Time 1h

Yield Serves 4 to 6

Number Of Ingredients 13

1 tablespoon extra virgin olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
1/2 cup barley, washed
3 cups chicken stock or vegetable stock
Salt
1 tablespoon cornstarch
2 tablespoons water
3 cups plain lowfat yogurt
Freshly ground pepper
1/2 cup chopped cilantro
Fresh lemon juice to taste
For garnish: paper-thin lemon slices

Steps:

  • Heat the olive oil in a large, heavy soup pot over medium heat and add the onion. Cook, stirring often, until the onion is tender and beginning to color, about 10 minutes. Add the garlic and the barley and stir together until the garlic smells fragrant, about 30 seconds to a minute. Add the stock and salt to taste (depending on the saltiness of the stock), and bring to a boil. Reduce the heat to low, cover and simmer 40 minutes, or until the barley is tender.
  • In a small bowl, combine the cornstarch and 2 tablespoons water and stir until the cornstarch is dissolved. Whisk into the yogurt. Off the heat, whisk this mixture into the soup. Return to low heat and bring to a bare simmer, stirring. Do not boil. Add salt to taste and a generous amount of pepper. Stir in the cilantro, and season with fresh lemon juice if desired (or squeeze a few drops over each bowl). Serve hot or warm, garnished with thin rounds of lemon.

Time 1h

Yield Serves four

Number Of Ingredients 12

1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1 1/4 teaspoons cumin seeds, lightly toasted and ground
Pinch of cayenne
1/2 pound brown lentils (about 1 1/8 cups), picked over and rinsed
1 small onion, cut in half
1 bay leaf
1 1/2 quarts water
Salt, preferably kosher salt, to taste
Freshly ground pepper
1 cup chopped cilantro (from 1 large bunch)
Plain low-fat yogurt for garnish

Steps:

  • Heat the oil in a large, heavy soup pot over medium heat, and add the garlic. Stir until fragrant, about a minute, and stir in the cumin and cayenne. Add the lentils, onion, bay leaf, water and salt. Bring to a boil, reduce the heat and simmer 40 minutes, until the lentils are tender and the broth aromatic. Add pepper, taste and adjust salt. Remove the halved onion and the bay leaf.
  • Coarsely puree the soup in an immersion blender or food mill. Alternatively, puree half the soup in blender, 1 1/2 cups at time, being careful to cover the top of the blender with a towel to avoid hot splashes, then stir back into the soup. Heat through.
  • Chop the cilantro, discarding the stems. Stir into the soup just before serving. Taste, adjust seasoning and serve, topping each bowl with a dollop of yogurt.

Time 10m

Yield 6-8 serving(s)

Number Of Ingredients 10

2/3 cup hulled wheat
3 cups yogurt
3 cups water
1 egg
2 tablespoons flour
1/2 teaspoon salt
1 medium onion, chopped
4 tablespoons butter or 4 tablespoons margarine
1 tablespoon chopped mint
1/3 tablespoon chopped parsley

Steps:

  • Cook wheat in 4 cups of water until tender.
  • Blend yogurt, water, egg and flour with beater.
  • Cook until it boils, stirring constantly with wooden spoon.
  • Add salt, cooked wheat and remove from heat.
  • Saute onion in butter, add mint and parsley.
  • Combine with soup.
  • Simmer 5 minutes.

Tips:

  • Use high-quality yogurt: For the best flavor and texture, use whole-milk yogurt that is fresh and creamy. Avoid using low-fat or non-fat yogurt, as it will not be as rich and flavorful.
  • Cook the barley properly: Barley should be cooked until it is tender but still has a slight bite to it. If you overcook the barley, it will become mushy and lose its flavor.
  • Use fresh herbs: Fresh herbs, such as cilantro and mint, add a bright, flavorful touch to this soup. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less, as they are more concentrated.
  • Season to taste: This soup is fairly mild, so be sure to season it to your liking. Add more salt, pepper, or garlic powder, as desired.
  • Serve with your favorite toppings: This soup is delicious served with a variety of toppings, such as crispy pita bread, croutons, or a dollop of sour cream.

Conclusion:

Hot yogurt soup with barley and cilantro is a delicious and healthy soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. Whether you like it mild or spicy, this soup is sure to warm you up from the inside out. So next time you are looking for a comforting and flavorful soup, give this recipe a try.
