1 cup sour cream
2 (16 ounce) cans refried beans
1 (4.5 ounce) can chopped green chiles, drained
1 (1.25 ounce) package McCormick® Taco Seasoning Mix
4 cups shredded Mexican blend cheese, divided

Steps:

  • Preheat oven to 350 degrees F. Microwave cream cheese and sour cream in large microwaveable bowl on HIGH 1 minute or until cheese is softened. Remove from microwave. Mix with wire whisk until smooth. Add refried beans, green chiles, Seasoning Mix and 2 cups of the cheese; mix well.
  • Spread bean mixture into 13x9-inch baking dish sprayed with no stick cooking spray. Sprinkle with remaining 2 cups cheese.
  • Bake 25 minutes or until cheese is melted. Serve with tortilla chips.

3/4 cup apple cider vinegar
1/2 cup vegetable oil
1 tablespoon water
1/2 cup sugar
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 15-ounce can corn, drained
1/2 cup finely chopped red onion
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
1/4 cup finely diced jalapeno (remove seeds for less heat)
Tortilla chips, for serving

Steps:

  • Combine the vinegar, oil, water, sugar, salt and pepper in a medium saucepan over medium-low heat. Whisk together and simmer for 3 minutes then remove from the heat. Set aside to cool.

2 pound(s) lean ground beef
1 - large onion, chopped
2 can(s) kidney beans, smashed with juice
1 can(s) kidney beans, drained and rinsed
1 1/2 cup(s) hot ketchup
3 tablespoon(s) chili powder
2 clove(s) fresh garlic, chopped
TOPPING
2 cup(s) sharp cheddar cheese (grated)
1/2 cup(s) onion, finely chopped
1 can(s) chopped black olives

Steps:

  • Brown the beef over high heat until brown and crumbly. Drain excess grease, lower the heat to medium and add the chopped onion and garlic; continue to cook until the veggies are tender.
  • Add in the beans, ketchup (if hot is not avail. I add hot sauce to taste), chili powder, salt and pepper to taste. Simmer for a a bit for the flavors to meld. I then put the mixture in a chafing dish.
  • Mix the topping ingredients together and sprinkle over the hot mixture and allow the cheese to melt.
  • Serve hot with tortilla chips!
