SHAKER SPICED GRAPE JUICE
This drink is a great alternative to hot apple cider. I've only had it once and got the recipe at Pleasant Union, one of the Shaker settlements here in Kentucky. The Shakers were wonderful cooks and most all of their recipes are deeelish.

SPICED (AND SPIKED) CONCORD GRAPE PUNCH
A bone-chilling celebration calls for cocktails of an equally eerie sort, such as this deep-purple punch. Cardamom pods, fresh grated nutmeg, and cinnamon sticks infuse concord grape juice with plenty of warm, spiced flavors. Mix it with vodka for a festive, adult beverage.

CONCORD GRAPE JUICE
Concord grapes are one of the greatest things on God's green earth. There really is no substitute for their fresh grapey flavor. Make this juice when the grapes are in season and then freeze it so you never have to live without it.
Yield Makes about 675 g (2 1/2 cups)
Number Of Ingredients 3
Steps:
- Combine the grapes, water, and sugar in a large heavy-bottomed saucepan and bring to a slow boil, then simmer until the grapes have broken down, about 1 hour. As they cook, gently mash the grapes with a slotted spoon to help them release their juices. Your kitchen will begin to smell like grape-flavored bubble gum: this is a good sign.
- Once the grapes have surrendered most of their juices and begun to look more like raisins, remove from the heat. Using tongs or a slotted spoon, remove the grape carcasses and transfer to a fine-mesh sieve set over a large bowl. Pour the juice over the grapes and press down on them to get every last bit of juice out of them. (We compost the remaining skins, seeds, and stems.)
- Use the grape juice right away, or store it in an airtight container in your fridge for up to 1 week or in your freezer for up to 1 year.
- Concord grape juice is used in Concord Grape Jelly (page 190).
CONCORD GRAPE JELLY
At one time my mother in law would make many different flavors of jams and jellies. This is one of her old recipes that she has given to me.

Steps:
- Sort and wash grapes, and remove stems. Place them into a large kettle and crush them. Add water, cover, and bring to a boil over high heat. Reduce heat to low, and simmer for 10 minutes. Remove from heat, and extract juice. Allow the juice to stand in a cool place overnight to prevent the formation of crystals in the jelly.
- Strain the juice through a double thickness of damp cheesecloth. Measure 4 cups of the juice into a large pot. Stir in the sugar. Quickly bring to a full rolling boil. Stir in pectin, and allow to boil hard for 1 minute. Remove from heat, and skim off foam. Pour into hot sterile jars, and process for 5 minutes in a boiling water bath.

Tips:
- Choose ripe, sweet grapes: The quality of your grapes will greatly impact the flavor of your juice. Look for grapes that are plump, deeply colored, and free of blemishes.
- Wash your grapes thoroughly: Before you start juicing, be sure to wash your grapes thoroughly to remove any dirt or debris.
- Use a juicer or blender: You can use either a juicer or a blender to make grape juice. If you're using a juicer, you'll get a clearer juice with less pulp. If you're using a blender, you'll get a thicker juice with more pulp.
- Add spices and sweetener to taste: The spices and sweetener in this recipe are optional, but they add a delicious flavor to the juice. You can adjust the amount of spices and sweetener to your liking.
- Enjoy your juice fresh or store it for later: Grape juice is best enjoyed fresh, but you can also store it in the refrigerator for up to a week or in the freezer for up to 6 months.
Conclusion:
This hot spiced concord grape juice is a delicious and refreshing drink that's perfect for any occasion. It's easy to make and can be enjoyed fresh or stored for later. So next time you have a bunch of grapes, be sure to give this recipe a try!
