1/8 teaspoon pure vanilla extract
3/4 cup chopped pecans (2 1/2 to 3 oz), toasted

Steps:

  • Bring milk and cream just to a boil in a 3-quart heavy saucepan over moderate heat, then remove from heat and whisk in dulce de leche until dissolved. 6 tablespoons unsalted butter, softened
1/2 teaspoon salt
1/2 teaspoon ground cinnamon, or any combination of cinnamon, ground ginger and ground cardamom
1/4 teaspoon ground nutmeg
1 heaping teaspoon dark brown sugar
1 heaping tablespoon dark or golden raisins, or a combination
Dollops of crème fraîche, whipped cream or ice cream (such as vanilla or dulce de leche) for serving

Steps:

  • Fill sous-vide cooker with hot water and heat to 170 degrees. Place lemon zest in a bowl. In another bowl, place apples. If using large apples, cut in half. Cut lemon and squeeze juice over apples, turning to coat.
