  • Dissolve yeast in warm water in a mixing bowl. Let stand until yeast is frothy, about 5 minutes.

2 1/4 cups milk
1/3 cup shortening, butter flavored
1 1/2 teaspoons salt
1/2 teaspoon baking soda
1/3 cup sugar
4 cups flour
2 1/4 teaspoons yeast (1 packet)
1 pinch sugar
1/2 cup warm water (not hot)
2 cups flour
1 1/2 teaspoons baking powder
3/4 cup butter, melted

Steps:

  • Heat milk and shortening in large bowl in microwave until shortening melts.
  • Meanwhile, dissolve yeast and pinch of sugar into warm water.
  • In a smaller bowl, whisk the salt, soda, sugar and first portion of flour.
  • Stir in half the flour mixture into the milk mixture. Stir in the yeast mixture, then stir in the remaining flour.
  • Let rise 1 1/2 hour in a warm place covered with a damp dish towel.
  • Whisk together baking powder and last portion flour. Stir into the batter.
  • Cover bowl with a plate and let rise in refrigerator 12-24 hours.
  • Shape rolls (see two options below) and let rise in a warm place for 1 1/2 - 2 hours. Bake at 400 degrees for about 15 minutes or until done.
  • PARKERHOUSE METHOD.
  • Roll dough out on floured board to about 3/8" thick. Place on cookie sheet and brush with melted butter. Fold each one almost in half.
  • CLOVERLEAF METHOD.
  • By hand, shape dough into 1" balls, dip in melted butter and place 3 per hole in a greased muffin tin.
  • Put remaining dough back into fridge and use within the next few days. Makes great cinnamon rolls too.

This the only recipe I use for everything now. If you live outside Canada your flour may not have the high protein/gluten that our Canadian milled flours have. You may wish to use bread flour. Makes delicious cinnamon buns also.

1 1/4 cups skim milk
1/3 cup vegetable oil or 1/3 cup canola oil
1/4-1/3 cup sugar (I use a 1/4 cup measure)
1 teaspoon salt
3 3/4 cups all-purpose flour (I have never found the need to use bread flour these rise beautifully)
2 1/4 teaspoons bread machine yeast

Steps:

  • Place all ingredients in order recommended by your bread machine manufacturer.
  • Select dough cycle and start machine.
  • I preheat my oven to 100°F and turn off.
  • When dough cycle is complete remove from machine and proceed.
  • I roll into a long log and cut into 12 pieces for hot dog buns or 9 pieces for large hamburger buns.
  • How big you want them is up to you.
  • For Hot Dog Buns, I roll out till they look like long skinny wieners,.
  • Hamburger Buns, I flatten with my palm till about the thickness of a pancake. They rise beautifully and look as nicely shaped as store bought ones.
  • Put on parchment-lined baking sheet so sides are almost touching.
  • You can brush with melted butter if you wish but I never bother.
  • Cover with cloth and put in the warm oven for 45-60 minutes to rise.
  • When doubled remove from oven.
  • I bake mine on the top shelf in my oven.
  • Turn oven to 400°F and when you put the buns in the oven, reduce temperature immediately to 375° and bake hot dog buns 15 minutes and hamburger buns 17 minutes.
  • CINNAMON BUNS. Use 1/3 cup sugar in recipe. Made 10 large buns.
  • Roll out to about 12 x 15" and spread with butter or margarine. Sprinkle cinnamon-sugar mixture over all and roll up tightly. Cut into as many buns as you want. I make 10.
  • Set oven to 400° and turn down to 375° when you put buns inches Bake 20 minutes.

2 1/2 c very warm water
2 Tbsp (or 2 packets) active dry yeast
1/2 c sugar
1 Tbsp (heaping) of salt
3/4 c shortening
7 - 8 c all purpose flour (divided - 3 c initially, then 4 - 5 later)

Steps:

  • 1. In a large mixing bowl, dissolve yeast in the warm water. Add sugar, salt, shortening & 3 cups of flour. Mix until pancake batter consistency (it will look chunky, because the Crisco will not be completely melted). Cover with plastic wrap & set on top of pan ½ filled with hot (not boiling) water. Cover with towel & let rise until double in a warm area (about 30 - 45 minutes).
  • 2. When doubled, stir in remaining flour & knead until smooth & elastic. Dough will be soft & slightly sticky. Divide into 24 parts & form balls of dough. Place in two 9X13 pans, cover again with plastic wrap and a towel, let rise an additional 30 to 45 minutes or until doubled.
  • 3. Bake in a preheated 375 degrees oven for 25 minutes, or until golden brown. Brush with melted butter or margarine.

2 pkg yeast
3/4 c sugar

1/4 c crisco
1 egg
6 1/2 - 7 c flour

Steps:

  • 1. Dissolve yeast in warm water.
  • 2. Add sugar, egg, salt, and Crisco. Mix well.
  • 3. Add flour until dough becomes easy to handle.
  • 4. Place in greased bowl, greased side up. Cover loosely with Saran Wrap and place in refrigerator overnight.

3 tablespoons potato flakes
1 ½ cups milk
½ cup vegetable oil
½ cup white sugar
1 teaspoon white sugar
2 eggs
1 teaspoon salt
1 tablespoon active dry yeast
6 ½ cups all-purpose flour
½ cup boiling water
½ cup warm water (110 degrees F/45 degrees C)

Steps:

  • Pour the boiling water over the instant mashed potatoes and set aside. Scald the milk with the oil and 1/2 cup of the sugar. Add The 1/2 cup very warm water and the teaspoon sugar to the yeast and set aside.
  • Add the potatoes to the milk mixture. Start adding the flour, then eggs, one at a time, beating with a mixer or dough hooks. Add yeast mixture and all but 1 cup of the remaining flour and salt.
  • Use the reserved 1 cup of flour for kneading. Knead the dough for about 5 minutes on a floured board. Place the dough in a large greased bowl, being sure to grease top of dough also. Cover dough with plastic wrap then with a double piece of foil. Refrigerate or let rise once and make into rolls. If made at night knead down dough before going to bed.
  • Once dough has risen once, punch down and shape into about 3 1/2 dozen rolls. Place rolls in a lightly greased baking dish and bake in a preheated 375 degrees F (190 degrees C) oven for about 15 to 20 minutes.

2 c milk
1/2 stick butter
6 c flour
3 pkg dry active yeast
1 1/2 tsp salt
3/4 c sugar
2 eggs
1/3 c oil
2/3 c water

Steps:

  • 1. In a bowl mix milk, water and butter. Heat to warm (not hot) in microwave. In a large bowl mix 3 cups flour, yeast, salt and sugar. Mix well. Add liquid ingredients to dry mixture. Once mixed together well, add eggs and oil. Mix well, then begin adding the last three cups of flour, one cup at a time. You will have to use your hands to mix properly. Dough will be stiff. Put dough in a large bowl next to warm stove to let rise until double. Once dough has doubled in size, punch down and knead. Pinch dough to make hot rolls. 2 teaspoons olive oil

1/2 cup celery, finely diced
1 cup Napa or white cabbage, finely shredded

2 teaspoons garlic, minced
1/2 cup carrots, finely grated
1/2 pound crawfish tails, peeled
2 tablespoons sesame oil
2 teaspoons raw sesame seeds
1 teaspoon fresh cilantro, finely chopped
2 eggs
8 egg roll skins
6 cups vegetable oil
1/4 cup dry mustard
1/4 cup water
Cilantro leaves
HOT SESAME DRIZZLE:
2 tablespoons sesame seeds
1 teaspoon salt
1 cup chicken stock
1/4 cup sesame oil
1/4 cup honey
1 tablespoon plus 1 teaspoon soy sauce
Black pepper, freshly ground, to taste

Steps:

  • EGG ROLLS: In a sauté pan, over medium heat, add the oil. When the oil is hot, add the onions, celery, cabbage. Season with salt and pepper. Sauté for 2 minutes. Add the garlic and carrots, sauté for 2 minutes. Add the crawfish tails. Season with salt and pepper. Continue to sauté for 2 minutes. Remove from the heat and turn into a mixing bowl. Add the sesame oil, sesame seeds, and cilantro. Mix well. Season with salt and pepper. Stir in 1 of the eggs. In a small mixing bowl, beat the remaining egg. Lay the egg roll skins on a flat surface and brush them with some of the remaining egg. Place one eighth of the filling at one end of each skin, leaving a 1/4-inch border at the top and sides, and roll up, tucking in the ends after the first roll. Heat the oil in a large saucepan. When the is hot, about 370°F, fry the egg rolls until golden brown, about 2 to 3 minutes. Remove from the fryer and drain on paper towels. Season with Essence. To serve, slice each egg roll in half, diagonally and place on each serving plate. Combine dry mustard with water. Drizzle each egg roll with the hot mustard and Hot Sesame Drizzle. Garnish with cilantro leaves. HOT SESAME DRIZZLE: In a small sauté pan, over medium-high heat, toast the sesame seeds until golden, about 2 minutes. Add the salt, chicken stock, sesame oil, honey and soy sauce. Whisk well. Bring the liquid to a boil, reduce the heat medium low and simmer for 3 minutes. Season with black pepper. Remove from the heat and keep warm.
