Time 35m

Yield 1/4 cup, 28 serving(s)

Number Of Ingredients 9

2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 cup sour cream
1/4 cup onion, finely chopped
4 garlic cloves, minced
1 (7 ounce) jar sun-dried tomatoes packed in oil, finely chopped
2/3 cup roasted red pepper, finely chopped
4 cups Italian cheese blend, shredded
1 cup parmesan cheese, shredded and divided

Steps:

  • Combine the cream cheese, mayo, sour cream, onion and garlic in a large mixing bowl - stir until blended. Stir in the tomoatores and peppers. Add the Italian blend cheese and 2/3 cup Parmesan. Stir until blended.
  • Transfer mixture to greased 9x13 baking dish. Sprinkle remaining parmesan cheese on top. Bake at 350 for 20 minutes, until edges are bubbly and browning.
  • Serve hot with crackers or vegetables.

Tips:

- Choose the right peppers: Look for ripe, firm, and brightly colored peppers. Avoid peppers with blemishes or bruises. - Roast the peppers properly: Roasting brings out the natural sweetness and flavor of the peppers. To roast the peppers, place them on a baking sheet and broil them for 15-20 minutes, or until the skins are blackened and blistered. - Peel and seed the peppers: Once the peppers are roasted, remove the skins and seeds. The easiest way to do this is to place the peppers in a paper bag and let them steam for 10 minutes. The skins will then peel off easily. - Use a food processor or blender: A food processor or blender is the best way to achieve a smooth and creamy dip. If you don't have a food processor or blender, you can mash the peppers by hand. - Season the dip to taste: Add salt, pepper, garlic, and other seasonings to taste. You can also add a squeeze of lemon juice or a dollop of yogurt for extra flavor.

Conclusion:

Roasted red pepper dip is a delicious and versatile appetizer or snack. It is easy to make and can be tailored to your own taste preferences. Serve the dip with pita bread, crackers, or vegetables. It is also a great addition to a sandwich or wrap. With its vibrant color and smoky flavor, roasted red pepper dip is sure to be a hit at your next party or gathering.
