Number Of Ingredients 6

1 cup sugar
6 tablespoons all-purpose flour
2 cups shredded sharp cheddar cheese
2 (20 ounce) cans pineapple chunks, drained with 6Tbsp juice reserved
1 cup cracker crumb (Ritz or same type)
8 tablespoons butter

Steps:

  • Heat oven to 350*. Spray medium sized casserole dish with non-stick spray. Drain pineapple juice reserving 6 tablespoons.
  • In large bowl mix together sugar and flour. Add the cheese and pineapple chunks. Stir until blended. Pour into prepared casserole dish.
  • In medium frypan melt butter; add cracker crumbs and reserved juice. Stir until blended.
  • Spread crumbs over top of casserole dish. Bake 25-30 minutes or until golden brown.
  • Let stand for 5 mintues. Enjoy!

Number Of Ingredients 6

2 (20) oz cans chunk pineapple
1 c sugar
6 Tbsp flour
2 heaping cups, grated mild cheddar cheese
1/2 c melted butter or margarine
1 heaping cup of ritz crackers, crushed ( i use a whole sleeve of crackers or more to cover the top)

Steps:

  • 1. Drain pineapple, reserve 6 Tablespoons of the pineapple juice.
  • 2. In a seperate bowl combine sugar and flour, stir in the juice you have reserved. Then add cheese and pineapple. Mix togther well.
  • 3. Note: I sometimes will add more cheese and even another can of drained pineapple to make a larger portion. Spoon into greased baking dish.
  • 4. Topping: Combine melted butter with crushed cracker crumbs, sprinkle on top and bake at 350 degrees for 30 minutes or until top is browned. I will sometimes add more crushed crackers and butter to cover the top all the way.

1 c water
1 c sugar or splenda
3 Tbsp pineapple gelatin mix (jell-o)
3 Tbsp cornstarch
20oz can(s) pineapple tidbits or chunks in 100% juice
1 c sharp cheddar cheese finely shredded
1 1/2 sleeves rita crackers crushed
1/2 stick butter
1/2 c pineapple juice

Steps:

  • 1. Preheat oven to 350F. Spray an 8"x8" pan or dish. In a medium pot with medium heat,whisk together water,sugar,pineapple geltin and corn starch until throughly combined and all the lumps are gone. Turn heat up to high and let mixture come to a boil and thickens. Take off heat.
  • 2. Drain pineapple throughly, setting a 1/2 cup of juice aside. Add pineapple to pot and stir. While pineapple mixture is cooling,begin making the topping. In a Large ziplock bag finely crush the Ritz crackers. Add crackers,melted butter and pineapple juice into a medium bowl and stir until combined.
  • 3. Add shredded cheese to cooled pineapple mixture and pour into baking dish. Spread Ritz topping over pineapple mixture. Bake in oven for about 30-35 minutes(until topping is golden brown). Serve warm. You can use this as a side dish or dessert.

Tips:

  • Use fresh pineapple for the best flavor. If using canned pineapple, be sure to drain it well.
  • Be sure to brown the butter before adding the sugar. This will help to give the casserole a rich, caramelized flavor.
