EASY HOMEMADE HOT PEPPER JELLY

Easy Homemade Hot Pepper Jelly image

This is a really simple and easy recipe that I got from my friend Kelly. It doesn't require chopping any hot peppers and it's a delicious appetizer served over cream cheese with crackers.

Provided by Darcy Perreault-Acker

Categories     Side Dish     Sauces and Condiments Recipes     Canning and Preserving Recipes     Jams and Jellies Recipes

Time 35m

Yield 192

Number Of Ingredients 6

8 green bell peppers, seeded and chopped
8 red, yellow or orange bell peppers, seeded and chopped
1 ½ cups vinegar
7 cups white sugar
2 tablespoons crushed red pepper flakes
4 (2 ounce) packages dry pectin

Steps:

  • Run the red and green peppers through a coarse grinder, or pulse in a food processor until finely chopped. Transfer to a strainer, and drain really well. This is key to your success.
  • While the peppers are draining, sterilize your jars by boiling or using the dishwasher. Keep hot.
  • In a large pot, combine the peppers, vinegar, white sugar, red pepper flakes and pectin. Bring to a rolling boil over high heat while stirring constantly. A rolling boil is one that does not stop when stirred. Boil for 1 minute.
  • Remove from the heat, and ladle into hot sterile jars to within 1/2 inch of the top. Seal with new lids and rings. Place into a boiling water bath for 15 minutes. The jars should be completely covered by water. Remove and let cool. The jelly will be somewhat loose. The last jar may not be full. Just refrigerate, and use within a week or two.

HOT-PEPPER JELLY

Hot-Pepper Jelly image

Pepper jelly makes a spicy-sweet match for soft cheeses, such as goat or Camembert (or even cream cheese) -- especially when served atop crackers or crostini. You can also use the jelly as a glaze for chicken or pork: Melt it, then brush it on the meat before roasting or after grilling.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 5h

Yield Makes about 2 cups

Number Of Ingredients 6

2 pounds unpeeled, uncored apples, cut into 1-inch chunks
1/2 cup apple-cider vinegar
1 1/2 teaspoons coarse salt
1/2 cup diced bell pepper
2 tablespoons minced seeded hot chile pepper, such as habanero or serrano
1 1/2 cups sugar

Steps:

  • Place a few small plates in freezer. Combine apples and 2 1/2 cups water in a saucepan. Bring to a boil, reduce to a simmer, and cook, partially covered, mashing occasionally with a potato masher, until fruit is very soft, 10 to 15 minutes. Transfer fruit to a fine sieve set over a heatproof bowl; let drain without pressing on fruit, 4 hours. Strain again through sieve lined with damp cheesecloth. (You should have 2 cups.)
  • In a saucepan, bring juice, vinegar, salt, bell pepper, and hot pepper to a boil. Add sugar; return to a boil, stirring until sugar is dissolved. Cook, stirring, 11 minutes. Turn off heat. Place a small spoonful of jelly on a chilled plate; return to freezer 1 minute. Remove and push your finger through mixture; if it wrinkles, it is done. If not, return to a boil for 1 to 2 minutes, then check again. (Or cook until a thermometer registers 221 degrees.) Skim foam from top.
  • Ladle into clean containers, leaving 3/4 inch of headroom; let cool completely. Cover, label, and refrigerate up to 1 month, or freeze up to 1 year.

HOT PEPPER GARLIC JELLY

Hot Pepper Garlic Jelly image

I have made several different recipes for hot pepper jelly and decided that I had tweaked them all to the point of newness. Here is my interpretation of a good, hot jelly that works well as a glaze on chicken or pork or on top of a brie or over some cream cheese. Heck I have even had it on celery with peanut butter but that's a whole other story. I use a variety of colored peppers for really pretty jelly, yellow, red green, etc. I think habenaros give the best flavor and heat. My instructions are kind of long but I thought the details of canning might be helpful to someone. Wear rubber gloves whenever handling hot peppers or you'll be sorry. Makes a great addition to a gift basket. Hope you enjoy it.

Provided by riffraff

Categories     Jellies

Time 36m

Yield 6 1/2-7 half pints

Number Of Ingredients 6

1 cup hot pepper, chopped (I use a mixture of whatever's ready in the garden, habenaros, thai chilis, tabasco, jalapeno)
1 red bell peppers or 1 green bell pepper, chopped
1/4-1/2 cup chopped garlic, to taste
1 1/2 cups white vinegar
6 cups sugar
1 -2 packet liquid Certo (or other liquid pectin)

Steps:

  • I begin by putting my jars and rings in a big pot of water on the stove and bring to a low boil.
  • Leave them boiling slightly till you are ready for them.
  • Have your jar flats ready on the counter along with a damp rag to wipe the rims of your jars after filling.
  • Put peppers, green pepper, garlic, vinegar and sugar in a large pot and mix well.
  • Bring to a boil, stirring often.
  • Boil for 5- 6 minutes.
  • Remove from heat and add Certo and stir.
  • Pour into 1/2 pint jars.
  • As soon as you fill a jar wipe the rim, put a flat in the ring and twist onto jar and invert jar on cloth towel to seal (heat from jar, ring and jelly should seal it).
  • Leave them on the counter for a while to finish sealing.
  • If you notice the peppers settling just give the jar a little shake every once in a while.
  • After they have cooled and sealed (you will not be able to push down on the flat at all) you can turn them over and tighten the rings again and you're done!
  • **NOTE FROM CHEF** One packet of liquid certo will work just fine, the jelly will "looser". I actually prefer it with one packet myself.

MALBEC INFERNO HOT PEPPER JELLY

Malbec Inferno Hot Pepper Jelly image

As a hot-sauce addict and after YEARS of experimenting, I have finally come up with the perfect balance of scorch and yumminess. This jelly should be poured onto a brick of cream cheese and served with your favorite cracker. You will need a food processor or blender to mince all these peppers before measuring into blender. Gloves to protect your hands are also strongly recommended. Substitute blackberry or blueberry juice for pomegranate if you like.

Categories     Side Dish     Sauces and Condiments Recipes     Canning and Preserving Recipes     Jams and Jellies Recipes

Time P1DT35m

Yield 14

Number Of Ingredients 9

2 cups minced hot red pepper
1 cup Malbec red wine
2 cups minced habanero pepper
½ cup pomegranate juice
1 tablespoon lemon juice
1 (1.75 ounce) package powdered fruit pectin
2 tablespoons powdered fruit pectin
1 teaspoon butter
4 cups white sugar, or more to taste

Steps:

  • Place red pepper and Malbec wine in a blender, while wearing gloves; blend until smooth. Transfer to a large stockpot. Blend habanero pepper, pomegranate juice, and lemon juice in blender until smooth; add to stockpot. Stir all the pectin and butter into pepper mixture. Bring to a rolling boil; stir in sugar. Continually stir until sugar is dissolved, 2 minutes. Remove from heat, stir for 5 minutes, and skim foam off the top.
  • Sterilize jars and lids in boiling water for at least 5 minutes. Pack the jam into the hot, sterilized jars, filling the jars to within 1/4-inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring water level to at least 1 inch above the tops of the jars. Bring water to a rolling boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

CROCKPOT HOT PEPPER JELLY CHICKEN

Crockpot Hot Pepper Jelly Chicken image

The other day I made hot pepper jelly. I do not use a food coloring so it isn't a pretty green, but more like a military green. However I planned on using in cooking only. The result was a nicely golden brown chicken with a nice taste and not as spicy as you would think.

Provided by Stormy Stewart

Categories     Chicken

Time 8h5m

Number Of Ingredients 2

1 roasting chicken
1 pt hot pepper jelly (homemade or bought)

Steps:

  • 1. Clean the chicken and put into a crock pot. Pour over that 1 pint of hot pepper jelly. I made mine with only 3 hot peppers. so it wasn't too hot.
  • 2. cook on low for 8 hours. in last 2 hours turn over on it's breast. It will come out a nice golden brown. I think it is because of the sugar content of the jelly

1 14- to 16-pound turkey, neck and giblets reserved for another use, turkey brined if desired
Olive oil
Kosher salt and freshly ground black pepper
For the glaze:
12 ounces hot pepper jelly, preferably homemade
2 tablespoons unseasoned rice vinegar, plus more to taste
Pinch kosher salt, plus more to taste
Pinch crushed red pepper flakes, plus more to taste, optional

  • Using wood chips in a gas grill is very easy but takes a little planning. If your grill has a smoker attachment, follow the manufacturer's instructions and fill it with wood chips that have been soaked in water or other non-flammable liquid for 30 minutes. If you don't have a smoker box, follow these simple instructions: Fill a small disposable aluminum pan with soaked wood chips, remove the cooking grate, and place the pan in the upper left corner of the grill, or at the spot where all the burners come together. The pan of wood chips will be resting directly on the ceramic briquettes, flavorizerbars, or lava rocks.
  • Preheat the grill with all the burners on high until smoke begins to appear around the edges of the grill. At this time, set the grill for indirect cooking (turn the burners that will be directly under the food off) and turn the other burners down to medium-low heat. Immediately place the food in the center of the cooking grate and close the lid of the grill to retain the heat and the smoke. You won't need to add more chips, as one panful is enough to impart a nice smoky flavor to the food.
  • Note: It is essential that you put the soaked wood chips in a gas grill during the preheat stage. Once you set the burners for indirect heat, there won't be enough heat to smolder the chips. Likewise, if you don't soak the chips, they will ignite and burn, not smoke.
  • Charcoal Grill Set-Up:
  • Using wood chips on a charcoal grill is much simpler than a gas grill. There is no special equipment necessary; all you do is soak the chips and put a handful directly on top of the white-gray ashed briquettes. To set up a charcoal grill for indirect cooking, place two equal piles of ashed briquettes on each side of the grill, separated by an aluminum pan filled with a bit of water. If you want just a hint of smoke, only use one handful of chips. If you want a more pronounced smoke flavor, add a handful or two more, but be careful: Too much smoke will turn the meat acrid and your food will taste more like ashes than smoke.
  • Note: There is a barbecue contingent that believes that smoke dehydrates the cooking chamber and steals moisture from the meat. To prevent any loss of moisture, I usually add some liquid in an aluminum pan to both charcoal and gas grills. After all, it can't hurt and we all know that steam does tenderize and cook food.
  • Smoke the Turkey:
  • Remove and discard excess fat from the turkey. Rinse the bird and pat dry. Twist the wing tips under the back. Brush the turkey with oil and lightly sprinkle with salt and pepper inside and out. If you brined your bird, skip the salt and pepper.
  • If using a gas grill, place the turkey on a roasting rack set in a disposable aluminum-foil roasting pan and place in the grill over the unlit burners. Bend the roasting pan to accommodate closing the gas grill.
  • If using a charcoal grill, set an aluminum pan filled with 2 inches water on the charcoal grate directly under where the turkey will smoke. Place the turkey, breast?side-up, directly on the cooking grate above the pan. Add wet wood chips directly to the gray-ashed charcoal briquettes. Place the lid on the grill and adjust the vents so that two-thirds of them are closed on the bottom and the top.
  • Cook over indirect heat without lifting the lid for at least 40 minutes to get good smoke on the turkey. Add more wet wood chips to the smoker box or to the charcoal as desired. After a total of 1 1/2 hours, you won't need to add any more wood, as the turkey will have developed a nice burnished color and "cooked" skin. Charcoal grillers will have to add about 12 briquettes to each side every hour; gas grillers don't need to do any tending. No need to baste; the thin coating of oil will promote browning and keep the juices inside the bird.
  • While the turkey smokes, prepare the glaze. In a small saucepan over low heat, melt the hot pepper jelly, stirring occasionally so it doesn't burn. When the jelly is melted, stir in the vinegar to combine. Add the salt and red pepper flakes, if using. If the glaze is too thick, add a bit more vinegar. Taste and adjust seasonings.
  • Cook the turkey for 12 minutes per pound total, or until a meat thermometer inserted in the thickest part of the thigh (not touching bone) registers 165°F and the juices run clear when the meat is pierced. Brush the smoked turkey with the glaze, cover, and cook for 15 minutes more. Transfer to a serving platter and let rest for at least 20 minutes before carving and serving.

Tips:

  • Use ripe peppers for the best flavor. The riper the peppers, the sweeter and more flavorful the jelly will be.
  • Wear gloves when handling peppers. The capsaicin in peppers can irritate your skin, so it's important to wear gloves when you're cutting them up.
  • Be careful not to overcook the jelly. If you overcook it, it will become too thick and syrupy.
  • Let the jelly cool completely before storing it. This will help to prevent it from spoiling.
  • Store the jelly in a cool, dark place. This will help to preserve its flavor and quality.

Conclusion:

Hot pepper jelly is a delicious and versatile condiment that can be used in a variety of dishes. It's perfect for adding a little heat and flavor to sandwiches, burgers, wraps, and salads. It can also be used as a glaze for chicken, fish, or vegetables. If you're looking for a new way to add some excitement to your meals, give hot pepper jelly a try. You won't be disappointed!
