PAULA DEEN'S CARAMELIZED VIDALIA ONION AND BLUE CHEESE HOT DIP

Paula Deen's Caramelized Vidalia Onion and Blue Cheese Hot Dip image

This is a quick and easy dip to make that everyone seems to love. I used panko bread crumbs because that is what I had in my pantry. I also found that you needed to cut the onion pieces into smaller strips (I took the onion and cut it in half and then half again). I also used Clemson Blue Cheese.

Number Of Ingredients 7

1 large sweet onion, chopped
3 (8 ounce) packages cream cheese, softened
2 cups Parmesan cheese, freshly grated
1/2 cup mayonnaise
1/2 teaspoon cayenne pepper, plus more to taste
1/4 cup fresh chives, finely chopped, plus more for garnish
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 425ºF. In the bowl of a food processor combine onion, cream cheese, Parmesan cheese and mayonnaise. Process until completely smooth. Add cayenne and fold in chives. Season to taste with salt and pepper. Transfer mixture to a 1-quart baking dish and smooth the top with the back of a spoon. Bake until browned and puffed, about 20 minutes. Cool slightly and garnish with chopped chives. Serve warm with crostini, crackers, or chips.

Tips:

  • Use high-quality cheese: The type of cheese you use will have a big impact on the flavor of the dip. Use a sharp cheddar or a combination of cheeses for a more complex flavor.
  • Don't overcook the onions: The onions should be soft and caramelized, but not mushy. Cook them over medium heat until they are golden brown.
  • Use a good quality beef broth: The beef broth will add flavor and depth to the dip. Use a low-sodium broth or reduce the amount of salt you add to the dip.
  • Serve the dip immediately: The dip is best served hot and bubbly. You can keep it warm in a slow cooker or fondue pot.

Conclusion:

This hot onion cheese dip is a delicious and easy appetizer that is perfect for any party or gathering. It is sure to be a hit with your guests. So next time you are looking for a quick and easy snack, give this recipe a try.
