Yield Serves 2

Number Of Ingredients 9

1 tablespoon mayonnaise
2 teaspoons Dijon-style mustard
1 teaspoon finely chopped fresh dill
1/2 pound mushrooms, sliced thin
1 tablespoon olive oil
2 slices of rye bread, toasted
2 thin slices of cooked ham
2 thin slices of Swiss cheese
1/2 small red onion, sliced thin

Steps:

  • In a small bowl whisk together the mayonnaise, the mustard, the dill, and salt and pepper to taste. In a skillet cook the mushrooms in the oil over moderately high heat, stirring occasionally, for 5 minutes, or until the liquid the mushrooms give off is evaporated, and remove the skillet from the heat. On a baking sheet spread one side of each slice of toast with half the mayonnaise mixture, top each toast with a slice of the ham, half the mushrooms, a slice of the Swiss cheese, half the onion, and salt and pepper to taste, and broil the sandwiches under a preheated broiler about 4 inches from the heat for 1 to 2 minutes, or until the cheese is melted and browned lightly.

SIMPLE HOT ROAST BEEF SANDWICHES WITH MUSHROOM AU JUS

Simple Hot Roast Beef Sandwiches With Mushroom Au Jus image

This is a quick recipe I came up with because we were just craving a French dip style sandwich. The mushrooms could be left out, but they flavor the au jus so much I dont think I could ever leave them out!

Time 30m

Yield 8 samdwiches, 8 serving(s)

Number Of Ingredients 12

2 cups mushrooms, sliced
1 lb roast beef, sandwich meat (we used the thinly sliced deli style)
1 loaf bakery Italian bread (or any other style bread you choose)
8 slices swiss cheese
32 ounces beef broth, divided
1 tablespoon cornstarch
1/2 teaspoon garlic powder
1 teaspoon mccormick garlic and herb seasoning
1/8 cup minced onion
4 tablespoons Worcestershire sauce
2 tablespoons olive oil
salt and pepper

Steps:

  • In a large skillet, saute mushrooms in olive oil. While they are sauteeing, season with garlic, Mccormick's, salt, and pepper.
  • Add beef broth (reserve 1/2 a cup), worcestershire sauce, and onion.
  • In a small bowl, mix 1/2 cup beef broth with cornstarch. Add to the mushroom mixture. Bring to a bowl, then reduce heat and let simmer about 5 minutes.
  • Add roast beef to mushroom au jus and cover, simmering about 10 minutes.
  • Meanwhile, cut your Italian bread into 8 slices. If not already split (sandwich style) go ahead and cut them, so you have 16 total slices of bread.
  • Place bread on cookie sheet. On 8 of the slices (bottom slice) place about 4 or 5 pieces of roast beef on each, then spread mushrooms evenly among each sandwich. Top each sandwich with a slice of swiss cheese.
  • Place sandwiches in oven and broil just until cheese is melted and bread is a bit toasted, about 5 minutes.
  • Serve sandwiches with a side of au jus to dip in!

This is one of Helen Gurley Browns favorite party hors d'oeuvre recipes and was shared by New York City caterer, Donald Bruce White. They can also be served for lunch or as part of a tea menu.

Time 50m

Yield 21 sandwiches

Number Of Ingredients 11

1 1/2 cups finely minced fresh mushrooms
1 tablespoon thinly minced shallots or 1 tablespoon whites scallion
4 tablespoons butter, divided
3 tablespoons all-purpose flour
1/2 cup chicken stock
1/2 cup heavy cream
1 dash cayenne
1 dash ground nutmeg
1 dash salt
1 dash white pepper
21 slices firm white bread, sliced thin

Steps:

  • Mince mushrooms and shallots. Saute in 2 tablespoons butter. Allow liquid from mushrooms to cook down.
  • Melt remaining 2 tablespoons butter in separate pan; stir in flour to make roux (paste). Add chicken stock, cream, cayenne, nutmeg, salt and white pepper. Cook until mixture becomes quite thick. (Don't let heat get too high.)When mixture is thick add mushroom mixture.
  • Trim crusts from bread. Spread some mushroom mixture on one slice of bread, add second slice, more mushroom mixture, then add third and final slice of bread. Don't spread mushroom mixture to edges, or it will ooze out. There should be enough mushroom mixture to make 7 triple-decker sandwiches.).
  • Preheat oven or toaster-oven to 400°F Toast sandwiches 10 to 12 minutes, or until they are slightly golden in color. Cut each sandwich into three fingers and serve warm.

Tips:

  • Use fresh, flavorful mushrooms. The type of mushroom you use will greatly impact the flavor of your sandwich. Choose mushrooms that are firm and have a good amount of flavor, such as cremini, shiitake, or oyster mushrooms.
  • Sauté the mushrooms properly. Sautéing the mushrooms until they are browned and slightly caramelized will help to bring out their flavor. Be sure to use a large enough pan so that the mushrooms can cook in one layer.
  • Use a flavorful bread. The bread you use for your sandwich should be able to stand up to the hearty flavors of the mushrooms. A good option is a sturdy sourdough or whole wheat bread.
  • Add your favorite toppings. Once you have your basic sandwich assembled, you can add your favorite toppings. Some popular options include cheese, avocado, bacon, and arugula.

Conclusion:

Hot mushroom sandwiches are a delicious and versatile meal that can be enjoyed for breakfast, lunch, or dinner. With a few simple ingredients and a little bit of time, you can create a sandwich that is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give hot mushroom sandwiches a try.
