3 tablespoons butter, divided
2 tablespoons all-purpose flour
1 cup whole milk
1 cup shredded process cheese (Velveeta)
1/2 teaspoon salt
2 cups diced fully cooked ham
1-1/2 cups elbow macaroni or medium noodles, cooked and drained
1 cup frozen peas, thawed
1/4 cup dry bread crumbs
1/2 teaspoon dried parsley flakes

Steps:

  • In a saucepan, melt 2 tablespoons butter; stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes. Remove from the heat; stir in cheese and salt until cheese is melted. , Add the ham, noodles and peas. Pour into a greased 1-qt. baking dish. Melt remaining butter; add bread crumbs and parsley. 1 lb ham luncheon meat, diced
8 oz colby/monterey jack shredded cheese
2 Tbsp poppy seeds
1 Tbsp onion, minced
1 stick butter, melted
1 Tbsp mustard
1 tsp worcestershire sauce
2-3 pkg 24 dinner rolls (1x2") in aluminum foil tray

Steps:

  • 1. Mix together the first four ingredients.
  • 2. Mix together hot melted butter, mustard and worcestshire. Pour over step 1 mixture only when ready to spread on rolls. It thickens up almost immediately.
  • 3. Take rolls out of package (do not separate!). Slice in half horizontally so you have a long bottom slice and a long bottom slice (not individual).
  • 4. Spread mixture on bottom slice of rolls and place top slice back on top.
  • 5. These can be made ahead. Place them on paper towel back in the aluminum trays and microwave when ready to serve. Sart with 1 minute and add 30 seconds at a time until hot. If you want them toasted, you can leave the paper towel step out and put the rolls straight in the aluminum trays and bake at 350 degrees for 12-15 minutes until lighly brown.

24 mini sandwich rolls
1 pound thinly sliced cooked deli ham
1 pound thinly sliced Swiss cheese
