1/2 teaspoon celery seed
1/8 teaspoon ground black pepper
3/4 cup water
1/3 cup distilled white vinegar

Tips:

  • To save time, use a mandoline to slice the potatoes.
  • If you don't have a mandoline, use a sharp knife to slice the potatoes as thinly as possible.
  • Soak the potatoes in cold water for at least 30 minutes before cooking. This will help to remove the starch and make the potatoes less likely to stick together.
  • Boil the potatoes in salted water until they are tender but still slightly firm. Do not overcook the potatoes, or they will become mushy.
  • While the potatoes are cooking, prepare the dressing. Whisk together the vinegar, mustard, oil, sugar, salt, and pepper in a small bowl.
  • Drain the potatoes and add them to a large bowl. Pour the dressing over the potatoes and toss to coat.
  • Add the bacon, onion, and parsley to the bowl and toss to combine.
