CHOCOLATE-CHERRY ICE CREAM PIE WITH HOT FUDGE SAUCE
Steps:
- For sauce:
- Bring whipping cream to simmer in heavy medium saucepan; remove from heat. Add chopped chocolate; whisk until smooth.
- For crust and filling:
- Preheat oven to 350°F. Grind cookies in processor until coarse crumbs form. Add butter and blend until crumbs cling together and are evenly moistened. Press crumb mixture over bottom and up sides of 9-inch-diameter glass pie dish. Bake crust until slightly puffed and darker, about 10 minutes. Cool crust on rack. Combine cherries, sugar and brandy, if desired, in heavy medium saucepan. Stir over medium heat until sugar dissolves and mixture comes to boil. Reduce heat; simmer until thick syrup forms, stirring often, about 10 minutes. Remove from heat. Mix in almond extract. Cool to room temperature.
- Place ice cream in large bowl. Fold in cherry mixture and chocolate chips. Pack ice cream mixture into prepared crust. Cover pie and freeze. (Sauce and pie can be prepared 3 days ahead. Cover and refrigerate sauce. Keep pie frozen.)
- Rewarm sauce over low heat. Cut pie into wedges; serve with sauce.

MEXICAN FROZEN HOT CHOCOLATE PIE
Found this recipe in a recent issue of my Mom's Woman's World magazine. Served it at a BBQ I hosted and it was a smash hit. Don't let the cayenne scare you off. The heat is very subtle. That's how you make frozen chocolate "hot"! You can still make the recipe without it, but it just won't be the same.

HOT CHOCOLATE PIE
Just made my first one tonight. Tried to think of an easy chocolate flavored pie to make at home with no baking and came up with this one. Still a little soft, but open to any ideas to improve on this recipe. Quick and delicous though!

Tips:
- Use high-quality chocolate: The type of chocolate you use will greatly impact the flavor of your pie. Opt for a high-quality semisweet or bittersweet chocolate with a cocoa content of at least 60%.
- Don't overcook the chocolate: Overcooked chocolate can become grainy and lose its flavor. Cook the chocolate mixture just until it reaches a smooth, velvety consistency.
- Let the pie cool completely before serving: This will give the pie time to set and firm up. If you serve the pie too soon, it may be runny and difficult to slice.
- Garnish the pie with whipped cream, chocolate shavings, or fresh berries: This will add a touch of elegance and make your pie even more delicious.

Hot chocolate pie is a rich, decadent, and comforting dessert that is perfect for any occasion. With its creamy chocolate filling and flaky crust, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this hot chocolate pie recipe a try.
