SPICY FRIED CHILI PEANUTS

Spicy Fried Chili Peanuts image

A great tv snack or as an appetizer. For less heat use less chili powder. This can be made ahead but is best used within 12 hours of cooking. Recipe source: Bon Appetit (September 1985)

Provided by ellie_

Categories     Lunch/Snacks

Time 35m

Yield 1 pound

Number Of Ingredients 6

1/4 cup peanut oil
3 garlic cloves, thinly sliced
1 lb unsalted peanuts, roasted
4 tablespoons dried ancho chile powder (or any chili powder)
1/2 teaspoon cayenne pepper
2 -3 teaspoons salt

Steps:

  • Heat oil in a large skillet over very low heat. Add garlic and cook until crisp and brown, stirring occasionally (15-20 minutes). DO NOT BURN. Discard garlic.
  • Add peanuts to skillet, increase heat to medium high and shake pan until oil is absorbed by peanuts and peanut aroma is strong (5 minutes); remove from heat.
  • Stir in chili powder and cayenne pepper and season with salt.

Tips:

  • Choose the right peanuts: Raw peanuts work best for this recipe, as they absorb the flavors of the spices better. You can also use roasted peanuts, but they won't be as flavorful.
  • Use a variety of chili peppers: This will give your peanuts a more complex flavor. Some good options include cayenne pepper, chili powder, and paprika.
  • Don't be afraid to experiment with different spices: In addition to chili peppers, you can also add other spices to your peanuts, such as garlic powder, onion powder, and cumin.
  • Roast the peanuts before coating them in the spice mixture: This will help the spices adhere to the peanuts and give them a more even coating.
  • Let the peanuts cool completely before storing them: This will help them stay crispy.

Conclusion:

Hot chili peanuts are a delicious and easy-to-make snack that is perfect for parties, potlucks, or just enjoying at home. With a variety of chili peppers and spices to choose from, you can customize the flavor of your peanuts to your liking. So next time you're looking for a spicy snack, give hot chili peanuts a try. You won't be disappointed!
