This recipe was on one of my recipe disks. I tried it and it was great, except if you're going to use potato chips on the top instead of the Chow Mien Noodles, I'd NOT use the 1 tsp of salt in the recipe. Try it and let me know what ya'll think.

Tips:

  • To ensure a crispy breadcrumb topping, use fresh breadcrumbs and pulse them in a food processor until fine. Season the breadcrumbs with salt, pepper, and garlic powder for extra flavor.
  • For a creamy yet light casserole, use a combination of cream of chicken soup and milk. For a richer flavor, use heavy cream instead of milk.
  • Cook the chicken breasts thoroughly before adding them to the casserole. Chicken is cooked through when it reaches an internal temperature of 165°F (74°C).
  • If you don't have self-rising flour, you can make your own by adding 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt to 1 cup of all-purpose flour.
  • Garnish the casserole with fresh parsley or chives before serving for a pop of color and freshness.

Conclusion:

With its crispy breadcrumb topping, creamy sauce, tender chicken, and vegetables, Hot chicken casserole is a hearty and comforting dish that's perfect for a weeknight meal.
