HOT CHICKEN APPETIZERS

I had to prepare something to take to a party tonight, and after working all day, I had no ideas. This is what I threw together, and it got such good reviews, I figured I'd best write it down. Enjoy! (Measurements are approximate, since I wasn't measuring when I made it. Adjust to suit your taste.)

Time 1h

Number Of Ingredients 9

1 puff pastry sheet, thawed
1 Tbsp butter
1/3 c onion, finely chopped
12 cherry tomatoes, chopped
3/4 c baby spinach, chopped
3 clove garlic, minced
8 oz cream cheese
1 can(s) chicken, drained and chopped (13 ounce can)
parmesan cheese

Steps:

  • 1. Melt butter in a saucepan over medium-high heat. Add onions and tomatoes and cook until onions are translucent. Reduce heat and stir in spinach and garlic.
  • 2. Cut cream cheese into small chunks and add to saucepan. Stir until well mixed and smooth.
  • 3. Add chicken to saucepan and stir until all ingredients are incorporated. Add salt and pepper to taste. Remove from heat and set aside.
  • 4. Preheat oven to 400 degrees F. Place three mini muffin pans on a large cookie sheet. (This is to make them easier to get in and out of the oven - not completely necessary)
  • 5. Unfold puff pastry sheet onto a lightly floured surface and roll to about half original thickness. Be sure to use enough flour to keep the pastry from sticking, but don't overdo it!
  • 6. Using a 2" biscuit cutter, cut pastry into circles. Press one circle into the bottom of each section of mini muffin pans. The pastry should extend only about half-way up the side of the sections.
  • 7. Place about 1 tablespoon of chicken filling into each pastry lined muffin section. Filling should pile up in the middle, leaving the edges of the pastry exposed.
  • 8. Lightly sprinkle the filling with parmesan cheese, then bake for 30 minutes. Serve hot. Makes about 36 appetizers.

Tips:

  • For crispy chicken: Use a combination of all-purpose flour, cornstarch, and bread crumbs for the coating. This will help the chicken get extra crispy in the oven.
  • Use a buttermilk marinade: Buttermilk helps to tenderize the chicken and gives it a slightly tangy flavor. You can also use yogurt or kefir as a substitute.
  • Don't overcrowd the baking sheet: Make sure to leave enough space between the chicken pieces so that they can cook evenly.
  • Bake the chicken until it is cooked through: The internal temperature of the chicken should reach 165°F (74°C) before you remove it from the oven.
  • Serve with your favorite dipping sauce: Hot chicken is traditionally served with a spicy sauce, such as Frank's RedHot or Buffalo sauce. You can also serve it with ranch dressing, blue cheese dressing, or honey mustard.

Conclusion:

Hot chicken appetizers are a delicious and easy way to enjoy this classic dish. With a few simple ingredients and a little bit of time, you can make these tasty treats at home. So next time you're looking for a party appetizer or a quick and easy meal, give hot chicken appetizers a try!
