CINNAMON RED HOT APPLE PIE

Cinnamon Red Hot Apple Pie image

Many years ago, a co-worker of mine used to go apple picking annually and would then bring some apples to me so I could make a pie for him. I got tired of making my same old apple pie and asked him if I could experiment a little bit. He agreed, and this is what I came up with. He was pleasantly surprised (and so was I).

MEXICAN HOT APPLE PIE

Mexican Hot Apple Pie image

Many Many moons ago I worked for a little not-so-fast fast food Mexican restaurant called Jolly Tamale as a cashier and a cook as well (we all did everything there!). They served a dish they called a Mexican Apple pie, which I absolutely fell in love with. I started making these at home using storebought cinnamon tortilla...

Categories     Fruit Desserts

Number Of Ingredients 9

CINNAMON TORTILLA CHIPS
1 pkg tortillas, flour
melted butter
cinnamon sugar
TOPPING
can(s) 1-2 cans depending on how many you're serving, of apple pie filling
1 pkg shredded cheddar cheese
1 pkg red hot candies, crushed in a food processor
optional: ready whip whipped cream (the kind in the can)

Steps:

  • 1. TORTILLA CHIPS: Preheat oven to 350 degrees. Brush each individual tortilla generously with butter. Sprinkle generously with cinnamon sugar, and cut into 8th's. Place on a cookie sheet and bake in oven until light brown (they brown quickly, keep an eye on them!), usually around 8-10 minutes. You can add a bit more butter and cinnamon sugar once they come out of the oven.
  • 2. TOPPING: Place chips on the bottom of an individual serving plate. Spoon apple pie filling over top of the chips. Sprinkle Red Hot candy powder over top of the pie filling (to taste), sprinkle with cheddar cheese, and place in microwave on medium power, until the cheese is melted. You can choose to add whipped cream after it's finished cooking in the micro. SERVE HOT!
  • 3. NOTE: I eat these quite a bit for dessert, and because they're so easy to make, I keep more ingrediants on hand that what I'll use for a night's servings. I bake extra chips, and store them in an airtight container for future use. When I crush my red hots, I use 3-4 bags worth, and put what I'm not using immediately into a ziplock baggy or airtight container for future use. And of course, I'm always stocked up on apple pie filling now, so making these becomes a 3 minute dessert, including prep!!! My personal tastes are to add extra cheese (I love apples and cheddar cheese together!!!), a little extra red hot dust for extra flavor, and opt out of using whipped cream (not a fan of the stuff to begin with.).

Tips:

  • Use a variety of apples: This will give your pie a more complex flavor and texture. Some good choices include Granny Smith, Honeycrisp, and Braeburn.
  • Peel and core your apples: This will make them easier to slice and will also help prevent the pie from becoming too mushy.
  • Slice your apples thinly: This will help them cook evenly and will also make it easier to fit them into the pie crust.
  • Add some spices to your apples: This will help to enhance their flavor. Some good choices include cinnamon, nutmeg, and ginger.
  • Use a good quality pie crust: This will make a big difference in the overall flavor and texture of your pie. You can either make your own pie crust or use a store-bought one.
  • Don't overfill your pie crust: This will make it difficult to seal the pie and will also make it more likely to boil over. Leave about 1 inch of space around the edges of the pie crust.
  • Bake your pie at a high temperature: This will help to create a crispy crust and will also help to prevent the pie from becoming too mushy.
  • Let your pie cool slightly before serving: This will help to prevent the pie from falling apart when you cut it.

Conclusion:

Apple pie is a classic dessert that is perfect for any occasion. With its sweet and tangy filling and its flaky crust, it's sure to please everyone at your table. Follow these tips to make the best apple pie you've ever had!
