2 tablespoons butter
4 peaches, pitted, thickly sliced or halved
1/2 lemon, juiced
1 1/2 tablespoons extra-virgin olive oil
4 pieces boneless, skinless chicken thighs
2 pieces boneless, skinless chicken breast
Salt and freshly ground black pepper
1 shallot, chopped
1 (2-inch) piece ginger, grated or minced
3/4 cup chicken stock
2/3 cup peach preserves
2 teaspoons hot sauce (recommended: Frank's Red Hot)
2 tablespoons Worcestershire sauce

Steps:

  • Heat a medium skillet with the butter over medium heat. Add the peaches and the juice of 1/2 lemon, and cook until tender and lightly golden, 10 minutes. Turn off the heat.

4 cloves garlic, pressed
1 ½ cups orange juice

1 vanilla bean, split in half
2 tablespoons rice-wine vinegar
2 teaspoons light-brown sugar
3 tablespoons low-sodium soy sauce
1/4 teaspoon freshly ground pepper
2 teaspoons canola oil
1 whole skinless, boneless chicken breast (12 ounces), cut into 1/2-inch-wide strips
1 onion, sliced into 1/4-inch-thick half-moons
2-inch piece ginger (3/4 ounce), cut into 1/8-inch-thick matchsticks, plus more, finely chopped, for garnish
1/2 green chile, finely chopped, plus more thinly sliced for garnish
