HORST MAGER'S HEARTY LENTIL SOUP
This is from Horst Mager's Rheinlander Restaurant in Portland, Oregon - wonderful German food. The soup is very tasty and filling. When I make it we just have a loaf of good bread to go with and that's all for dinner. (Here is a picture of the Rheinlander... will post a picture of the soup when I make some)

HEARTY LENTIL SOUP WITH HAM AND POTATOES
Steps:
- In a soup pot, heat olive oil over medium-high heat. Add shallots, carrot, and celery and cook, stirring occasionally, until vegetables are softened, about 5 minutes. Stir in lentils and chicken stock and bring to a boil. Reduce heat to low, cover, and simmer 10 minutes. Puree with immersion blender to thicken.
- Stir in potatoes and ham, cover, and simmer until potatoes are softened, 10 minutes longer. To serve, ladle soup into bowls and swirl in parsley puree.
- Combine garlic, salt, pepper, and parsley in a blender or food processor (preferably small model) and process until pureed.
- Yield: about 1/3 cup
Tips:
- Use a variety of lentils for a more flavorful soup. Lentils come in a variety of colors and sizes, each with a slightly different flavor and texture. Using a mix of lentils will give your soup a more complex flavor and a more interesting texture.
- Don't overcook the lentils. Lentils should be cooked until they are tender but still hold their shape. Overcooked lentils will become mushy and lose their flavor.
- Add vegetables to your soup for extra flavor and nutrition. Any type of vegetable can be added to lentil soup, but some common choices include carrots, celery, onions, garlic, and potatoes. Vegetables add sweetness, crunch, and vitamins to the soup.
- Season the soup to taste. Lentil soup can be seasoned with a variety of herbs and spices, such as salt, pepper, garlic powder, onion powder, cumin, and paprika. Taste the soup as you go and add more seasonings until you reach the desired flavor.
- Serve the soup with a side of bread or salad. Lentil soup is a hearty and filling meal, but it can also be served with a side of bread or salad to make it a more complete meal.
Conclusion:
Lentil soup is a delicious, healthy, and affordable meal that is perfect for a cold winter day. It is also a great way to use up leftover lentils. With a few simple ingredients and a little bit of time, you can make a pot of lentil soup that the whole family will enjoy. So next time you're looking for a quick and easy meal, give lentil soup a try.
