Tips:

  • For a creamy and smooth mashed potato, use Yukon Gold or Russet potatoes. Avoid waxy potatoes like red potatoes, as they will not mash as well.
  • To prevent the potatoes from becoming watery, drain them well after boiling and rice them while still hot.
  • For a richer flavor, use heavy cream or whole milk instead of regular milk. You can also add a knob of butter or cream cheese.
  • To make the caramelized onions, use a sweet onion like Vidalia or Walla Walla. Cook them slowly over low heat until they are golden brown and caramelized.
  • For a spicy kick, add a tablespoon or two of prepared horseradish to the mashed potatoes. You can also add some grated fresh horseradish or chopped chives.

Conclusion:

Horseradish mashed potatoes with caramelized onions are a delicious and easy-to-make side dish that is perfect for any occasion. The creamy and smooth potatoes are complemented perfectly by the sweet and savory caramelized onions, and the horseradish adds a bit of a spicy kick.
