1 (6 lb) sirloin tip roast (tied)
1/2 cup prepared horseradish
2 tablespoons kosher salt
2 tablespoons Dijon mustard
2 tablespoons finely chopped Italian parsley
1 tablespoon fresh coarse ground black pepper
1 tablespoon sugar
1 tablespoon sherry wine vinegar

Steps:

  • Preheat oven to 375 degrees. Set a rack in a large, deep, roasting pan and place beef raost on the rack.

Roast in the lower 1/3 of the oven for about 2 hours, until an instant read thermometer inserted in the center of the roast registers 125 degrees. Transfer the roast to a cutting board and let rest for at least 20 minutes.,.
  • Discard string and thinly slice the roast beef across the grain. Transfer the meat to a platter and serve with mashed potatoes.

Tips:

  • To achieve a flavorful and evenly cooked roast beef, it's recommended to let it rest at room temperature for about an hour before roasting.
  • For a crispy and golden crust, rub the roast beef generously with the horseradish mixture before roasting.
  • To prevent the horseradish crust from burning, keep a close eye on the roast during the cooking process and adjust the oven temperature if necessary.
  • Use a meat thermometer to ensure that the roast beef reaches the desired internal temperature for your preferred doneness.
  • Allow the roast beef to rest for 10-15 minutes before carving to allow the juices to redistribute throughout the meat, resulting in a tender and juicy roast.
