1 pork tenderloin (3/4 pound)
2 garlic cloves, peeled and quartered
1 teaspoon balsamic vinegar

HORSERADISH SAUCE:
2 tablespoons fat-free mayonnaise
2 tablespoons reduced-fat sour cream
1 teaspoon prepared horseradish
1/8 teaspoon grated lemon zest

2 tablespoons brown sugar

Stir in water, vinegar, sugar, and salt and pepper to taste and simmer, stirring occasionally, until almost all liquid is evaporated and vegetables are tender, about 15 minutes. Serves 2.
