1 tablespoon honey
1/3 cup packed canned peaches, 5 slices (Canned blends up nice and smooth if using fresh be sure they are nice and ripe)
6 mint leaves
1/4 cup fresh lime juice
1/4 cup golden rum (You can add more if you want clap of thunder or a stronger drink)
12 ice cubes
seltzer water or carbonated lemon-lime beverage
mint leaf
lime slice

Steps:

  • Place in a blender everything but 6 ice cubes, soda and garnishes.
  • Blend till smooth.Place three ice cubes into two tall glasses.

5 leaves fresh mint
2 lime wedges
1 fl oz ginger syrup
ice
2 fl oz bourbon
3 fl oz club soda
fresh mint, to serve
lime wedge, to serve
1 cup fresh ginger, peeled and chopped
1 cup sugar
2 cups water

Steps:

  • In a small saucepan, combine ginger syrup ingredients and bring to a boil. Lower to a simmer and cook for 10 minutes.
  • Strain through a sieve and cool.
  • Place the mint and one lime wedge in the bottom of tall glass. Muddle well and add 1 ounce (30 ml) of ginger syrup. Add the second lime wedge and muddle again.
  • Top off glass with the bourbon, ice, and club soda. Stir well and garnish with a lime wedge and a few mint leaves.

1/2 cup raw sugar
5 slices ginger, cut roughly 5mm thick
1 handful kaffir lime leaf
1 lemongrass, stalk sliced
1 1/2 ounces rum, Anejo preferred
1 ounce ginger simple syrup
1/2 lime, cut into quarters
8 leaves mint
ice
sparkling water
1 lime, wheel
1 sprig mint
1 lemongrass, stalk

Steps:

  • Syrup: place the water and raw sugar in a saucepan over a medium low heat. Stir to dissolve the sugar. Remove from the heat and add the lemongrass, ginger and kaffir lime leaves. Leave for a couple of hours or overnight before straining. The syrup will keep in a sterilised bottle for around 2 weeks.
  • Mojito: place the syrup, lime and rum in a glass and muddle with a muddling stick to release all the juice from the lime. If you don't have a muddling stick you can use the end of a wooden spoon.
  • Place the mint leaves in your hand and clap them together. Rub the mint leaves around the rim of the glass before popping them in the glass.
  • Top with ice and sparkling water. Stir to make sure everything is well mixed, and garnish with lime wheels, a mint sprig and a lemongrass stalk.
