1 cup uncooked long grain white rice
3 ½ cups cold water
1 (12 fluid ounce) can evaporated milk
½ cup white sugar
½ teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Place the rice in a bowl with enough water to cover it and let it soak overnight.
  • Strain the rice and discard the water. Stir the cold water and evaporated milk together. Place the drained rice into a blender along with half of the diluted milk. Blend until the rice is finely ground, about 30 seconds. Add the sugar, cinnamon, and vanilla; blend well. Pour in the remaining diluted milk; blend.
  • Line a strainer with two layers of cheesecloth. Place the strainer over another bowl to catch the liquid. Strain the rice milk through the cheesecloth, discard the solids. Repeat the process if necessary. Serve over ice.

1 cup uncooked rice
4 1/2 cups warm water
3/4 cup sugar (I use Splenda Blend)
1 teaspoon vanilla extract
2 tablespoons ground cinnamon, to serve

Steps:

  • Place rice in a large bowl. Pour warm water over rice. Set aside an soak overnight.
  • Pour into blender jar; process until smooth. Strain mixture through a fine mesh sieve.
  • Return to blender, process again. Strain mixture into pitcher through a clean, dampened towel or cheese cloth. Rinse blender, return mixture to blender.
  • Add sugar and vanilla and process until combined. Refrigerate until chilled. Serve over crushed ice.
  • FOR FLAVOR VARIATIONS:
  • CONDENSED MILK: substitute a can of sweetened condensed milk for the sugar and blend with the rice. Serve with ground cinnamon on top.
  • CHOCOLATE - Add 2 ounces grated Mexican chocolate to rice. Continue as directed above.
  • STRAWBERRY - Prepare as directed above, adding 1 package (10 ounces) frozen strawberries with the sugar and vanilla. Continue as directed.

This is how my Grandma used to make this classic agua fresca for us. It is so refreshing and delicious, bringing back fond memories of childhood. MAKES ABOUT 6 CUPS OF HORCHATA. TIme does not include overnight soaking. This can be dairy free - just don't add the milk.

1 c white rice, long grain
1 small cinnamon stick
5 c water, divided use
1 tsp vanilla
1/2 c milk
1/3 c sugar

Steps:

  • 1. In a saucepan or microwave, heat just TWO (2) cups of water until hot. Put the rice and cinnamon stick in a glass bowl or heat-proof pitcher. Pour the hot water over and stir for a moment. Cover with plastic wrap and soak overnight, or at least 8 hours to soften the rice.
  • 2. Pour the rice and liquid into a blender jar. Blend until very smooth. Strain the mixture into a bowl, using a spoon to help the liquid pass through the strainer.
  • 3. Add the vanilla, milk, and the remaining 3 cups of water. Add the sugar, stirring until dissolved. Taste and adjust to your taste (more sugar, more milk, more vanilla, etc.). Refrigerate and serve cold over ice. I usually dust ground cinnamon over the top. Be sure to stir before serving, as the rice settles to the bottom.
