HOOTENANNY PANCAKES

"Volcano Pancakes" may be a more appropriate name. The pancake will rise a few inches above the pan while baking. My family says the tall sides are the best part. This is fast, simple, and delicious and it's so easy to have the ingredients on hand. I got this from another website and am posting it for my cookbook.

Yield 6-8 People

Number Of Ingredients 6

1 stick butter (or less)
6 eggs
1 c. milk
1 c. flour
1/2 t. salt
1 t. sugar

Steps:

  • Place butter in a 9x13 pan in oven at 400 degrees until bubbly. Beat together remaining ingredients and pour into pan. Bake 25-30 minutes. Cut into squares and serve with syrup. Note: As this bakes, it goes up the sides of the pa, but it won't run over.

Tips:

- To achieve fluffy pancakes, ensure the wet and dry ingredients are mixed separately before combining. This allows the gluten in the flour to develop properly, resulting in a light and airy texture. - Buttermilk adds a tangy flavor and helps to tenderize the pancakes. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes. - Melted butter adds richness and moisture to the pancakes. You can use unsalted or salted butter, depending on your preference. - Be careful not to overmix the batter. Overmixing can result in tough pancakes. Mix just until the ingredients are combined. - To avoid flat pancakes, let the batter rest for a few minutes before cooking. This allows the baking powder to activate and create a light and fluffy texture. - Cook the pancakes over medium heat. If the heat is too high, the pancakes will brown too quickly and be undercooked in the middle. - Flip the pancakes only once, when bubbles start to form around the edges and the surface is mostly dry. Flipping too often can result in deflated pancakes. - Serve the pancakes warm with your favorite toppings, such as butter, syrup, fruit, or whipped cream.

Conclusion:

Hootenanny pancakes are a delicious and versatile breakfast option that can be enjoyed by people of all ages. With their fluffy texture, tangy flavor, and customizable toppings, these pancakes are sure to be a hit at your next brunch or breakfast party. Whether you like them simple with just butter and syrup or loaded with fruit and whipped cream, hootenanny pancakes are a great way to start your day.
