This is a wonderful chili recipe that I have used to win chili cook-offs in Indiana. It's hearty and spicy award winning chili that is sure to hit the spot on a cold winter's night. The key is in using name brand tomato soup, I have tried it with others but haven't gotten the same results. Your friends will never guess the secret ingredient. Enjoy!

1 pound ground beef
1 medium onion, chopped
1 teaspoon red pepper flakes
1 tablespoon ground cumin
2 (10.75 ounce) cans condensed tomato soup
2 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can crushed tomatoes
5 tablespoons chili powder
1 teaspoon ground black pepper
1 teaspoon salt
2 (15.5 ounce) cans pinto beans, drained
cayenne pepper to taste

Steps:

  • Crumble the ground beef into a soup pot over medium-high heat. Cook and stir until evenly browned. Drain off most of the grease. Add onion, red pepper flakes, and half of the cumin; cook and stir until onion is tender.
  • Pour in the tomato soup, chicken broth, and crushed tomatoes. Season with chili powder, salt and pepper. Simmer for 30 minutes. Pour in the beans, and season with remaining cumin and cayenne pepper; simmer for another 30 minutes. Now enjoy.

2 pounds lean ground beef (90% lean)
2 cups chopped onion
3/4 cup chopped celery
1/2 cup chopped green pepper
3 garlic cloves, minced
1 teaspoon salt, optional
1/4 teaspoon pepper
1 tablespoon brown sugar
3 tablespoons chili powder
2 cans (14-1/2 ounces each) stewed tomatoes
1 can (46 ounces) tomato juice
1 can (10-1/2 ounces) beef broth
1/2 cup uncooked elbow macaroni
1 can (15 ounces) kidney beans, rinsed and drained

Steps:

  • In a Dutch oven or soup kettle, brown beef until no longer pink, breaking it into crumbles. Add onion, celery, green pepper and garlic. Continue cooking until vegetables are tender. Add all remaining ingredients except last 2; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours, adding macaroni during last half hour of cooking time. Stir in the beans and heat through.

i got this so long ago, i do not know who to give credit for. at the last minute you add a little pasta. there are a lot of ingredients but its worth it. don't leave out one because it makes a difference.

2 lb hamburger
2 c onions
2 c celery, chop fine
3 cloves of garlic
1 Tbsp brown sugar
2 Tbsp chili powder
4 c tomato juice
1 can(s) tomato soup
1 soup can of water
1 can(s) beef broth
2 Tbsp ketchup
1 can(s) large can of chili beans
1/2 c uncooked spaghetti, broken
sharp cheddar for garnish

Steps:

  • 1. brown the hamburger. add all the ingredients except the spaghetti. half hour before serving add the broken spaghetti or macaroni. stir. i usually make this the night before because its much better after it has had a chance for the flavors to blend.

There's a 100 different ways to make chili, but this recipe is the gold standard in Southern Indiana. This is my personal family rendition of it, but most hoosiers cook up something very similar to this on those cold winter days in the midwest.

2 lbs hamburger
2 (12 ounce) cans chili beans
1 (12 ounce) can black beans
2 whole onions
2 bell peppers
1 quart tomatoes, canned from the garden
1 (14 ounce) can tomatoes and green chilies
6 jalapeno peppers
2 teaspoons chili powder
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon salt
1 teaspoon Tabasco sauce
3/4 cup spaghetti
6 cups water

Steps:

  • In a very large Soup pot, begin browning the hamburger on medium high. As the hamburger is browning, chop all the onions and peppers coarsely or finely, according to your liking.
  • Stir in the onions and peppers when the hamburger is almost browned and allow to saute in the meat juices.
  • Pour in the tomatoes, beans, and water when the hamburger is completely browned. Stir and allow to simmer for a few minutes and then add all of the spices. Once the chili has begun to boil break the spaghetti into small pieces and add. Spaghetti is the standard, but any pasta can optionally be tossed inches.
  • Now turn the heat down to medium low, and continue to stir and simmer for at least 20 minutes. 20 minutes is the quick and dirty for weekday family suppers, but the chili only gets better the longer it cooks. On a rare lazy Saturday afternoon, I will give it 2 hrs, remembering to stir it every few minutes so it doesn't scorch on the bottom of the pot.
  • Once it is done, serve with crumbled saltine crackers, chopped onions, jalapenos, and shredded cheese as optional toppings. This makes a great family meal and lunches for the rest of the week, or cook it ahead and bring to a gathering or tailgate party during football season. Us Indiana folk wouldn't make it through the winter without this stick to your ribs hearty chili.
