1/4 cup fresh lime juice
6 mint leaves
1/4 cup superfine sugar
1/2 cup vodka, (optional)
1 cup crushed ice

Steps:

  • Place melon, lime juice, mint, sugar, and vodka in a bar blender. Blend until smooth, about 45 seconds. Pour through a cheesecloth-lined strainer into a pitcher.

  • Working in batches, puree 6 cups cubed honeydew melon in a blender. Pour puree through a fine sieve into an 8-inch square nonreactive dish.
