HONEY WHEAT BREAD WITH CHIA AND FLAX

Honey Wheat Bread With Chia and Flax image

This bread is hearty and nutritious. The honey lends excellent flavor, while the chia gel and flax meal give it a nutrional boost. It is great as a sandwich bread or toast.

Provided by Kristiano129

Categories     Breads

Time 3h10m

Yield 24 slices

Number Of Ingredients 10

1 cup milk, room temp
3 tablespoons honey
2 tablespoons butter
1 teaspoon chia seeds, soaked in
2 tablespoons water (see note)
1 1/2 teaspoons salt
1/2 cup flax seed meal
1 cup whole wheat flour
2 cups white bread flour
2 teaspoons active dry yeast

Steps:

  • Place all ingredients into bread machine in the order listed and mix on the "dough" cycle. Punch down dough after the cycle is complete and roll into a sandwich loaf and place in a well-greased bread pan. Allow dough to rise in a warm location for about 45-60 minutes, then bake at 375 degrees for 40 minutes.
  • Optional - brush the dough with milk or egg wash prior to baking.
  • * Note - prior to making this recipe, soak chia seeds in water to create a chia gel. I keep a fair amount of chia gel in my fridge and use about 2 tbsp of chia gel in this recipe, however food.com does not recognize Chia Gel as an ingredient.

Tips:

  • Mise en Place: Before starting, measure and gather all ingredients to ensure a smooth baking process.
  • Proper Measuring: Use a kitchen scale for accurate measurements, especially for ingredients like flour and oats, to achieve the desired texture and consistency.
  • Fresh Ingredients: Use fresh honey and buttermilk for optimal flavor. If buttermilk is unavailable, substitute with 1 cup milk mixed with 1 tablespoon lemon juice or vinegar.
  • Mixing and Kneading: Mix dry ingredients thoroughly before adding wet ingredients. Knead the dough until it becomes smooth and elastic, about 8-10 minutes, to develop the gluten and give the bread its structure.
  • First Rise: Place the dough in a warm, draft-free area to allow it to rise for about 1-1½ hours, or until doubled in size. This step is crucial for proper fermentation and flavor development.
  • Shaping and Panning: After the first rise, punch down the dough and divide it in half. Shape each half into a loaf and place them in greased 9x5-inch loaf pans.
  • Second Rise: Cover the pans and let the loaves rise again in a warm place for about 1 hour, or until they reach the edges of the pans. This second rise ensures a light and airy texture.
  • Baking: Preheat the oven to 350°F (175°C) before baking. Bake the loaves for about 45-50 minutes, or until a toothpick inserted in the center comes out clean. The crust should be golden brown.
  • Cooling: Once baked, remove the loaves from the pans and let them cool completely on a wire rack before slicing and serving.

Conclusion:

This honey whole wheat bread with oats and flax seed is a wholesome and flavorful addition to any meal. With its perfect balance of sweetness and nutty flavor, it's a great choice for sandwiches, toast, or simply enjoying as a snack. The combination of whole wheat flour, oats, and flax seed provides a boost of fiber and nutrients, making it a healthier alternative to traditional white bread. Whether you're an experienced baker or just starting out, this recipe is easy to follow and yields a delicious, homemade loaf of bread that's sure to impress.
