Time 1h50m

Number Of Ingredients 10

1 batch store bought or home made pie dough (1 roll of store bought pie dough is enough for two individual 6 inch tarts)
1 tablespoon unsalted butter
1 tablespoon olive oil
1 small yellow onion (sliced into thin rings)
½ cup crème fraîche
1 teaspoon Dijon mustard
1 cup shredded Gruyere cheese
½ tablespoon fresh thyme leaves (chopped, plus more for garnish)
1 apple (cored and thinly sliced)
Salt and freshly ground pepper

Steps:

  • On a lightly floured surface, roll out the dough and press into two six-inch tart pans, trimming off excess. Refrigerate until firm, about 30 minutes.
  • Preheat oven to 375°. Line the dough with parchment paper and top with pie weights or dried beans. Bake for 20 minutes. Remove the parchment and weights. Continue baking until the crust is golden brown and crisp, about 10 minutes more.
  • Transfer tart pans to a wire rack and let cool slightly. Reduce the oven temperature to 350°.
  • Meanwhile, make the filling: In a skillet over medium heat, melt the butter with the olive oil and swirl the pan to combine. Add the onions and cook until lightly browned and starting to caramelize, about 8 minutes per side. Remove from heat.
  • In a small bowl, stir together the crème fraîche and mustard and spread evenly over the crust. Sprinkle with half of the cheese and the thyme. Arrange the apple slices and onions on top. Sprinkle with the remaining cheese and season with salt and pepper.
  • Bake on the top oven rack until the pastry is golden and the cheese is melted, about 15 minutes. Let cool for 10 minutes, then garnish with thyme, cut into slices and serve.

Time 1h45m

Yield One 9-inch single pie, 8 servings

Number Of Ingredients 11

3 Golden Delicious apples, peeled and cored (about 1 1/4 pounds)
4 Granny Smith apples, peeled and cored (about 1 1/2 pounds)
1/2 cup honey
6 thyme branches
1/4 cup unsalted butter (1/2 stick), cut into small pieces
2 tablespoons instant tapioca
1/3 cup light brown sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
Flour, for dusting
Dough for 2 9-inch pie crusts (see recipe)

Steps:

  • Preheat oven to 425 degrees. Slice Golden Delicious apples and 3 Granny Smith apples into sixths.

Arrange half the apples in a single layer in skillet. Sprinkle 2 tablespoons butter over apples. Cook apples, turning, until well caramelized on all sides (but not cooked through), about 10 minutes. Scrape apples and honey mixture into a bowl. Add tapioca and toss to combine. Repeat cooking process with remaining honey, thyme, butter and sliced apples. Add second batch of apples to bowl; combine. Discard all thyme branches.
  • Thinly slice remaining Granny Smith apple and add it to bowl. Stir in sugar, ginger and salt.
  • On a lightly floured surface, roll out both crusts to 12-inch circles. Place one crust in 9-inch pie plate. Scrape apple filling into crust and top with remaining crust. Pinch edges to seal. With a knife, slice 4 vents in top of crust. Place pie on a foil-lined, rimmed baking sheet.
  • Bake for 15 minutes; reduce heat to 350 degrees and continue baking until crust is dark golden and apples are tender when pricked with a fork, about 45 minutes more. Let cool for 30 minutes before slicing.

BRIE, APPLE & ONION TART

Brie, apple & onion tart image

Apples and cheese make perfect partners in this puff pastry tart, ideal for using up the remnants of a cheeseboard or leftover cranberry sauce. Serve hot or cold for a Boxing Day buffet

Provided by Cassie Best

Categories     Buffet, Dinner, Lunch, Supper

Time 1h

Number Of Ingredients 9

320g pack ready-rolled all-butter puff pastry , defrosted at room temperature if frozen
1 tbsp olive or rapeseed oil , plus a drizzle
3 large onions , halved and sliced
2 tbsp white wine vinegar , plus a splash
1 tbsp Dijon mustard
small bunch of thyme , leaves picked, plus a few sprigs to serve
1 eating apple
100g cranberry sauce (or chutney)
175g brie , sliced (or other cheese)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Unroll the pastry sheet onto a large baking tray (leave it on the paper from the pack). If the edges are not straight, trim them with a sharp knife. Score a border, about 1cm in from the edge. Score a criss-cross pattern over the central piece of pastry (this will prevent it from rising too much) and around the border, if you like. Bake for 15 mins.
  • Meanwhile, heat the oil in a large pan. Add the onions and cook for 10-15 mins until softened and starting to caramelise. Stir in the vinegar, bubble for 1 min more, then add the Dijon mustard and thyme, season well and set aside. Slice the apple thinly through the core so a few slices have a nice star in the middle, and remove any seeds. Toss the slices in a splash of vinegar to prevent them from browning.
  • The pastry should be puffed and starting to colour. Push down the centre, then spread over the onions. Add blobs of cranberry sauce, then top with the apple slices and brie, overlapping them to cover the tart. Add a few more thyme sprigs, drizzle with a little oil, then put back in the oven for a further 25 mins until the cheese is bubbling and the apple slices are soft. Serve warm or cold.

Bake tart in 400 degree oven until crust is golden brown and topping is bubbling, about 20-25 minutes. Remove from oven. 13. Sprinkle with remaining 1 Tbs of chopped Thyme. Serve.

Tips:

  • Selecting the Right Onions: Choose medium-sized yellow or white onions for a balance of sweetness and pungency. Avoid using red onions, as they tend to be too sharp for this tart.
  • Slicing the Onions: Cut the onions into thin slices to ensure they caramelize evenly and cook through. This will also help in creating a crispy texture.
  • Caramelizing the Onions: Be patient and allow the onions to caramelize slowly over medium-low heat. Stir them occasionally to prevent burning and promote even caramelization.
  • Using Fresh Herbs: Thyme is the star herb in this recipe, but you can also add a touch of rosemary or sage for extra flavor.
  • Choosing the Right Apples: Granny Smith apples are a popular choice for tarts due to their tartness and ability to hold their shape during baking. However, you can also use other varieties like Honeycrisp, Pink Lady, or Braeburn.
  • Preparing the Apple Slices: Toss the apple slices with lemon juice to prevent browning and maintain their color.
  • Assembling the Tart: Arrange the apple slices and thyme sprigs evenly over the caramelized onions, ensuring they are slightly overlapping.
  • Blind Baking the Tart Crust: Before filling the tart with the apple and onion mixture, blind bake the crust to prevent it from becoming soggy.
  • Baking the Tart: Bake the tart at a high temperature initially to set the crust, then reduce the heat to allow the filling to cook through.

Conclusion:

This honey thyme roasted onion and apple tart is a delightful combination of sweet, savory, and tangy flavors, making it a perfect dish for any occasion. The caramelized onions add a rich depth of flavor, while the thyme and apples provide a refreshing balance. Whether you serve it warm with a scoop of vanilla ice cream or at room temperature, this tart is sure to impress your guests with its rustic charm and delicious taste.
