1/2 cup orange juice
1/4 cup honey
1/4 cup soy sauce
2 tablespoons fresh lemon juice
1 teaspoon garlic powder
1/2 teaspoon ground ginger
4 6-ounce swordfish steaks (each about 3/4 inch thick)
Cooked white rice

Steps:

  • Combine orange juice, honey, soy sauce, lemon juice, garlic powder and ginger in 8x8x2-inch glass baking dish and stir. Add fish and turn to coat. Let marinate at room temperature 1 hour, turning occasionally.
  • Preheat broiler. Remove fish from marinade; place on broiler rack. Transfer marinade to small saucepan and boil 1 minute. Broil fish until just opaque in center, basting occasionally with marinade, about 4 minutes per side. Transfer fish to plates and serve with rice.

Tips:

  • Choose fresh ingredients: Using fresh ingredients will result in a more flavorful marinade and ultimately a more delicious dish.
  • Don't skimp on the soy sauce: Soy sauce is a key ingredient in this marinade, so don't be afraid to use a good quality one. You can also experiment with different types of soy sauce, such as tamari or white soy sauce.
  • Use orange juice and zest: Orange juice and zest add a bright, citrusy flavor to the marinade. Be sure to use fresh orange juice for the best results.
  • Add some honey: Honey adds a touch of sweetness and helps to balance out the other flavors in the marinade. You can adjust the amount of honey to taste.
  • Don't forget the garlic and ginger: Garlic and ginger add a savory, aromatic flavor to the marinade. You can use fresh or ground garlic and ginger.
  • Let the meat marinate for at least 30 minutes: This will give the flavors of the marinade time to penetrate the meat.
  • Cook the meat over medium heat: This will help to prevent the meat from drying out. You can cook the meat on a grill, in a skillet, or in the oven.
  • Serve the meat with your favorite sides: This marinade goes well with rice, noodles, or vegetables.

Conclusion:

This honey soy and orange marinade is a versatile and flavorful marinade that can be used on a variety of meats. It's easy to make and only requires a few simple ingredients. The marinade adds a delicious sweet and savory flavor to the meat, and it also helps to tenderize it.
