Yield Makes 6 to 8 servings

Number Of Ingredients 8

6 ounces rosemary sprigs (about 2 large or 4 small bunches), divided
2 4-pound chickens
1/2 cup plus 2 tablespoons extra-virgin olive oil
1/4 cup fresh lemon juice
2 tablespoons honey
2 lemons, 1 halved, 1 sliced into eight 1/4" rounds
1 pound shallots, peeled
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 375°F. Line a large roasting pan with 3/4 of rosemary sprigs. Place chickens on top.
  • Whisk 1/2 cup oil, lemon juice, and honey in a small bowl to blend. Using your hands and beginning at the neck end of chicken, gently lift skin away from breast. Under skin of each chicken, rub 1/4 cup lemon mixture into meat. Drizzle remaining lemon mixture all over outside of chickens.
  • Place 1 lemon half and 1 shallot inside each chicken cavity; stuff with remaining rosemary sprigs, dividing equally. Season chickens all over with salt and pepper. Place remaining shallots around chickens; arrange 4 lemon rounds on top of each chicken. Drizzle shallots and lemon rounds with remaining 2 tablespoons oil.
  • Roast chickens, basting frequently with pan juices, for 45 minutes. Increase oven temperature to 425°F and continue roasting until an instant-read thermometer inserted into the thickest part of the thigh registers 165°F and skin is deep golden and crispy, about 10 minutes longer.
  • Spoon pan juices over chickens, shallots, and lemon slices and serve in roasting pan.

HONEY & ROSEMARY FRIED CHICKEN

Honey & Rosemary Fried Chicken image

I loved the light, crispy batter and the combination of flavors--there is something very appealing about the combination of garlic and honey! There wasn't enough flour or buttermilk to coat 3-4 pounds of chicken. From article about fried chicken in Taste of the South magazine--featured restaurant, Julep, Jackson, Mississippi (http://juleprestaurant.com/menu_latenite.htm)

Categories     Chicken

Time 44m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 (3 -4 lb) chicken, cut into 8 to 10 pieces or 3 lbs chicken pieces
1 -1 1/2 cup all-purpose flour
1 tablespoon garlic powder
1 tablespoon salt (or less!)
1 tablespoon white pepper
1 cup buttermilk
peanut oil (for frying)
3/4 cup honey
1 tablespoon butter
1 sprig rosemary, chopped

Steps:

  • Wash chicken and pat dry.
  • Mix flour with garlic powder, salt, and pepper.
  • Dip chicken in seasoned flour, then buttermilk, then seasoned flour again. Set aside.
  • In a large skillet, heat oil to 325°F over medium-high heat. Add chicken, skin-side down, beginning with the dark meat. Keeping oil at 325°F, cook each side for 5 to 6 minutes covered and then 5 to 6 minutes uncovered, for a total cooking time of 20 to 24 minutes. Drain chicken on a wire rack.
  • To serve, drizzle Honey Rosemary Glaze over chicken, if desired.
  • For Honey Rosemary Glaze: In a small saucepan, combine honey, butter, and rosemary. Cook over low heat on stovetop until butter has melted. Stir to combine.
  • Chef's note: Use more flour to offset salt. Also, be sure you only "warm" honey--don't let it get hot enough to boil! I used chicken tenders (see photo).

ROASTED ORANGE ROSEMARY HONEY GLAZED CHICKEN

Roasted Orange Rosemary Honey Glazed Chicken image

This is always a hit when I make it for dinner parties and Boxing Day dinner because the chicken is always fall-off-the-bone juicy and people love the glaze. People always go for seconds! You may quarter 2 chickens instead if you aren't able to get just legs from your butcher, but I find the legs are juicier and save money. Serve this dish with fragrant rice and dilled carrots or roasted asparagus.

Tips:

  • Use fresh rosemary: Fresh rosemary has a more intense flavor than dried rosemary. If you don't have fresh rosemary, you can use 1 teaspoon of dried rosemary.
  • Don't overcrowd the pan: When you cook the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly.
  • Use a meat thermometer: To make sure the chicken is cooked through, use a meat thermometer. The chicken is done when the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest: After you cook the chicken, let it rest for a few minutes before serving. This will help the juices redistribute throughout the chicken.
  • Serve with your favorite sides: Honey rosemary chicken can be served with a variety of sides, such as roasted vegetables, mashed potatoes, or rice.

Conclusion:

Honey rosemary chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of honey, rosemary, and chicken is flavorful and satisfying. With just a few simple ingredients, you can create a meal that your family and friends will love.
