Steps:
- Pre heat the oven to 475 F. Line a baking sheet with parchment paper and set aside. In a small bowl mix 4 garlic cloves, smashed, olive oil and dry thyme and combine well.
- Place diced potatoes and the olive mix in a zip bag seal then mix well to coat evenly.
- Spread potatoes in the prepared baking sheet, then sprinkle salt and pepper to taste (I found a pinch of each works great). Make sure you don't over crowd the potatoes as they will boil instead of roasting so use a large baking sheet.
- Place in the pre heated oven and roast for 25-30 minutes or until the potatoes are a golden brown.
- Meanwhile, place sliced mushrooms in a non stick skillet, sprinkle salt and pepper to taste, add 3 tbsp olive oil and saute until the mushrooms are slightly soft and brown and the juice has evaporated, about 7-10 minutes. Add minced garlic and saute for an additional minute or until the garlic is fragrant.
- Turn the heat off and sprinkle chopped fresh parsley. Mix to coat.
- Mix cooked mushrooms with roasted potatoes and serve warm or re heat in the oven for a few minutes, if served the next day.
GARLIC MUSHROOM AND BABY POTATOES
Steps:
- Wash potatoes thoroughly and place them in a small pot. Add water enough to cover the top. Pour in 2 tablespoons of soy sauce.
- Boil baby potatoes for 10-15 minutes or just until cooked. Do not overcook potatoes, check by poking one with a toothpick. If it comes through easily then it should be done.
- Cut baby potatoes in halves.
- In a pan or skillet, melt butter over medium heat and saute garlic until tender.
- Add potatoes and mushroom and cook until edges are browned.
- Add rosemary and basil and 1 tablespoon soy sauce and season with salt and pepper as needed.
- Remove from pan and transfer to a serving dish. Enjoy as a side to your favorite chicken, pork or beef or as an appetizer.

- On a rimmed baking sheet, toss the mushrooms with 1 tablespoon olive oil, and season with salt and pepper, to taste.
- On another rimmed baking sheet, toss the potatoes with the remaining 1 tablespoon olive oil, and season with salt and pepper, to taste. Put both pans in the oven, and roast until the mushrooms are browned and the potatoes are cooked through, about 20 minutes, tossing once and rotating the sheets halfway through. Add the cayenne, herbs, Worcestershire, and hot sauce. Blend until fully incorporated and the dressing is a pale green. Season the dressing with salt and pepper, to taste, if needed.
- Add the potatoes and mushrooms to a serving bowl and pour in the dressing. Toss to coat and serve warm or room temperature.
HONEY ROASTED BALSAMIC MUSHROOMS
Easy quick and extremely simple. These are done just in aluminum pouches so clean-up is 5 seconds. Some tangy balsamic, sweet honey, salt, pepper and fresh herbs makes this amazing. As someone mentioned to me, I didn't give a time for marinating these. I like to go 1-2 hours, not much more, but I have friends who have made them and marinating much longer with success. I would suggest just tossing in the vinegar to start with with no marinating time. If you are a fan like me of balsamic, try marinating a bit longer next time until you reach the time that is right for you. Note: A good aged balsamic can make a big difference in the flavor so if you are using a cheaper every day balsamic, you may want to cut down on the amount of vinegar you use. Thanks for bringing it to my attention and enjoy all.

Steps:
- Marinade -- Toss all the ingredients in a large baggie and toss well to coat the mushrooms. As mentioned above. I like to marinade 1-2 hours. But to start I would just toss and roast. The next time you make them, try marinating a big longer until you find the time that works best for you. Balsamic can be an acquired taste. So start off slow. Also try different vinegars. I have 1 bottle of aged balsamic I use just for this type of dish or a nice salad dressing and it really makes a difference. I don't buy it often but if you use balsamic as often as I do, it is worth it.
- Roasting -- Take a large sheet of aluminum and place the mushrooms in the center and fold up like a package. Just seal well.
- Bake -- 425 for about 20-30 minutes on the middle rack. Or you can make this on the grill outside. Just be careful if you move them around. On a outside grill I do move them around a bit so they don't burn. Just use a spatula vs tongs so you don't puncture the pouch is all.

ROASTED POTATOES AND MUSHROOMS WITH MELTED TALEGGIO CHEESE

Steps:
- Preheat oven to 400 degrees. Toss mushrooms with 4 teaspoons oil and 1/2 teaspoon salt. Season with pepper. Toss with sage and garlic. Spread on a rimmed baking sheet, and roast until mushrooms are golden brown and tender, about 15 minutes.
- Toss potatoes with remaining 5 teaspoons oil and 3/4 teaspoon salt. Season with pepper. Divide potatoes between 2 rimmed baking sheets, spreading in an even layer. Roast, rotating pans halfway through (tossing if browning too quickly), until dark golden brown and crisp, 35 to 40 minutes.
- Preheat broiler with rack 6 inches from heat source. Toss together mushrooms and potatoes, and divide evenly between two 5-by-7-inch oval baking dishes. Top each with Taleggio, and broil until cheese melts and is pale golden, 2 to 3 minutes.
Tips:
- Use a variety of mushrooms. This will give your dish a more complex flavor. Try using a mix of button mushrooms, cremini mushrooms, and shiitake mushrooms.
- Roast the potatoes and mushrooms separately. This will help them to cook evenly. Roast the potatoes for 20-25 minutes, or until they are golden brown and crispy. Roast the mushrooms for 10-15 minutes, or until they are tender.
- Make sure the honey-balsamic glaze is hot when you add it to the potatoes and mushrooms. This will help the glaze to stick to the vegetables.
- Garnish the dish with fresh herbs, such as thyme or rosemary. This will add a pop of color and flavor.
Conclusion:
Honey roasted potatoes and mushrooms is a delicious and easy side dish that is perfect for any occasion. It is a great way to use up leftover potatoes and mushrooms. This dish is also a good source of vitamins and minerals. The potatoes are a good source of potassium, vitamin C, and fiber. The mushrooms are a good source of selenium, potassium, and niacin.
