1 ½ cups cubed cooked chicken

SALAD
16 oz pasta of choice (i like bow tie or wagon wheel)
1 rotisserie chicken, deboned and shredded
1 yellow bell pepper, cored and diced
1 orange bell pepper, cored and diced
1 c snow pea pods, halved
1 apple, cored and diced
1 c grapes, cut in half
3 scallions, sliced thin
DRESSING
1/2 c mayonnaise
1/4 c honey
3 Tbsp cider vinegar
2 Tbsp dijon mustard
1 Tbsp poppy seeds
1/2 tsp salt
1/4 tsp black pepper

Steps:

  • 1. Cook pasta according to directions. Drain pasta, then transfer to paper or kitchen towel lined rimmed baking sheet. Set aside to cool and dry for 15 minutes.
  • 2. In large bowl combine chicken, peppers, snow peas, apple, grapes, and scallions.
  • 3. In small bowl wisk together mayonnaise, honey, vinegar, mustard, poppy seeds, salt and pepper.
  • 4. When pasta is cooled, add it to the chicken and veggies. Toss. Add dressing and stir to coat.

1 cucumber, chopped
2 kiwi, quartered and sliced
1 pint strawberry, sliced

1 cup poppy seed dressing, Kraft creamy poppy seed dressing and dip preferred

Steps:

  • Cook pasta according to package. Allow to cool, or rinse under cold water.
