1 cup honey
5 whole star anise
2 tablespoons fresh lemon juice
Pinch of fine sea salt
6 medium firm but ripe pears (about 2 1/2 pounds), peeled, quartered, cored
1/2 cup crème fraîche or sour cream

Steps:
