Pecan Crusted Chicken Breasts With Honey-Dijon Sauce image

This is one of my recipes that is a combination of several recipes I found. The pecans give the chicken a nice texture. I really love that it takes under 1/2 hour from start to finish and is a good solid main course.

1/2 cup butter
3 tablespoons Dijon mustard
1 tablespoon honey
6 ounces pecans, finely ground (about 1.5 cups)
8 boneless chicken breast halves, pounded to 1/4-inch thick
1 tablespoon vegetable oil
2/3 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In saucepan, melt 6T butter.
  • Whisk in 2T mustard and 1T honey until blended.
  • Scrape into a shallow dish.
  • Place ground pecans in a separate shallow dish.
  • Dip chicken into mustard mixture 1st then dredge with pecans.
  • In a large frying pan, heat the remaining 2T butter & oil over medium heat
  • Add chicken and cook approximately 3 minutes per side, until lightly browned and tender.
  • Place on serving dish and cover with foil to keep warm.
  • Discard all but 2T of fat from pan and reduce heat to low.
  • Add sour cream; whisk in remaining 1T mustard, salt, & pepper. Blend well.
  • Cook just until heated through, do NOT boil.
  • Serve over chicken.
  • I like to serve with spinach salad with hot bacon dressing and steamed asparagus.

1/2 teaspoon seasoned salt
1/4 teaspoon pepper

  • Sprinkle salmon with seasoned salt and pepper. Place fish on oiled grill rack, skin side down. Grill, covered, over medium-high heat or broil 4 in. from heat until fish just begins to flake easily with a fork, 6-8 minutes., Meanwhile, in a small saucepan, cook the pecans, honey and butter over medium heat until bubbly, 5-7 minutes. You'll get out of it what you put into it, meaning....real vanilla extract, real butter and real maple syrup. This needs to set overnight and that's not included in the prep time.

4 large eggs, beaten
3/4 cup half-and-half
1/2 tablespoon brown sugar
1 teaspoon vanilla extract
4 slices day-old French bread (1/2 inch thick slices)
1/4 cup unsalted butter, cut into pieces (1/2 stick)
1/4 cup brown sugar
1/4 cup honey
1/4 cup maple syrup
1/4 cup chopped pecans

Steps:

  • Combine eggs, half-and-half, 1 T. brown sugar and vanilla extract in a small bowl, whisk till blended; pour half of the mixture into a baking dish (sized large enough to hold bread slices somewhat compactly).
  • Place bread into dish; top with other half of egg mixture, making sure all parts of bread are saturated with the liquid. Refrigerate, covered, overnight.
  • Preheat oven to 350°. Place butter in a 13x9x2-inch baking dish and set in oven; when butter is melted, stir in brown sugar, honey, maple syrup and pecans.
  • Set soaked bread slices on top of pecan mixture. Bake for 30-35 minutes or until puffed and golden brown.
  • Remove with a spatula and invert slices on 2 serving plates. Spoon any extra syrup and nuts on top.
  • Serve immediately with ice cold milk or piping hot coffee.
