Number Of Ingredients 11

1 cup butter or 1 cup margarine, diced, plus a little extra to grease
1 cup plain flour
1/2 cup sugar
1 egg
1 lemon zest, finely grated
3/4 cup butter
1/4 cup honey
4 tablespoons sugar
3/4 cup brown sugar
5 tablespoons whipping cream
2 cups pecans

Steps:

  • Lightly grease a 14x11-inch swiss-roll tin.
  • Sift flour and salt into a bowl, Stir in sugar, then rub in butter until mixture resembles breadcrumbs. Blend egg and lemon zest. Press mixture into tin and prick pastry all over with a fork. Chill for 10 minutes.
  • Preheat oven to 375°F.
  • Bake pastry for 15 minutes, then remove from oven, leaving oven on.
  • Heat butter, honey and sugars in a saucepan until melted, then bring to a boil without stirring for 2 minutes. Remove saucepan from heat and stir in cream and nuts. pour over base, return tin to oven and bake for 25 minutes. Cool in tin.
  • Run a knife around pastry edge, invert on to a baking tray, place another tray on top and invert again. Cut into squares.

CRUST: 1-1/2 sticks butter, soft
3/4 cup confectioners' sugar
1 large egg
2 cups all purpose flour
TOPPING: 1 stick butter,
1/2 cup each honey & pack light brown sugar
1/4 cup heavy cream
1 TBSP vanilla extract
1-3/4 cups chopped pecans

Steps:

  • Beat butter, sugar, egg on medium-then slowly beat in flour on low. Spread in a 13x9 baking pan lined with nonstick foil or spray-Spread dough mixture evenly on bottom of pan and up the sides about 1/2 in. Bake 20 minutes until edges are lightly browned-While this is cooking prepare topping: Melt butter in saucepan, add sugar & honey, cream and vanilla cooking over low heat until sugar is dissolved-Remove from heat & add nuts-Pour over hot crust & Bake 20-25 minutes untilbubbly. Cool in pan on wire rack-Lift by ends of foil to cutting surface-Cut 4 rows lenghwise and 6 crosswise-
