1 tablespoon unsalted butter
1 tablespoon honey*
8 oz mixed nuts, (raw and unsalted (I used 2 oz each of hazelnuts, almonds, pecans, and shelled pistachios))
1/2 teaspoon smoked paprika ((not regular paprika))
1/2 teaspoon sea salt

Steps:

  • Preheat oven to 300 degrees F. Place the butter and honey in a glass baking dish. Heat in the oven until melted, about 2 minutes.
  • Add the nuts and the smoked paprika. Toss to coat.
  • Roast the nuts until golden, about 30 minutes, stirring every 10 minutes.
  • Remove the nuts from the pan and spread them evenly on wax paper or parchment paper. Sprinkle with the salt. Allow to cool and crisp up, about 20 minutes. Store in an airtight container, at room temperature.

2 tablespoons honey
salt, to taste
2 tablespoons canola oil

Steps:

  • NOTE: If you have unroasted nuts, preheat oven to 350°F (180°C). Spread peanuts onto a baking tray and bake for 10-12 minutes or until you can smell them.
  • In a food processor, blend peanuts. Scrape down the sides when necessary.
  • When the peanuts have broken down and become crumbly, add in honey and salt while still blending.
  • The mixture will turn into a ball and eventually even out.
  • Slowly add canola oil while still blending. Add more canola oil if you want a creamier texture.
  • Pour into a jar, store in a refrigerator and use within one month.

4 cups salted mixed nuts
2 -3 tablespoons fine sugar

  • Preheat oven to 325 degrees.
  • Mix honey, butter, and half of cinnamon in saucepan and heat to boiling. Cook for 2 minutes, stirring constantly.
  • In medium mixing bowl, pour honey mixture over nuts, stir well.
