1/4 cup butter, melted
3 tablespoons prepared dijon-style mustard
1 1/2 tablespoons honey
1/4 cup dry seasoned dry bread crumb
1/4 cup finely chopped pecans
4 teaspoons chopped fresh parsley
4 tablespoons fresh grated parmesan cheese
salt and pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Combine the first 3 ingredients in a small bowl.
  • Combine the remaining ingredients in another bowl.
  • Coat each of the fillets with the honey-mustard mixture lightly.
  • Sprinkle the breadcrumb mixture over the fillets coating them evenly and well.
  • Bake until the fillets flake easily with a fork (about 10-15 minutes).

BROILED TILAPIA
4 lb fresh tilapia fillets ( or 12 4oz fillets)
4 tsp fresh dill
4 tsp paprika
sea salt, to taste
ground black pepper, to taste
1 lemon, cut into slices
4 tsp lemon juice (from a second lemon),freshly squeezed
CRANBERRY-HONEYMUSTARD SAUCE
16 oz fresh or frozen cranberries
2 c orange juice,freshly squeezed
zest 2 oranges
2 tsp vanilla extract
6 Tbsp honey
6 Tbsp dijon mustard

Steps:

  • 1. FOR THE SAUCE: In a medium saucepan over medium-high heat,cook cranberries,orange juice,zest and vanilla,about 5 minutes. Reduce heat to medium low,stirring occasionally, and cook until thickened and reduced, about 20 minutes.
  • 2. Remove from heat,whisk in honey and Dijon mustard. Serve over Tilapia.
  • 3. FOR THE BROILED TILAPIA: Preheat broiler to high.
  • 4. Place fillets in a shallow baking dish and sprinkle with dill and paprika. Add salt and pepper, to taste, if desired. Lay slices of lemon in the middle of each fillet.
  • 5. Place baking dish 5 to 6 inches away from broiler. Broil fish for 8 to 10 minutes or until cooked through,but still moist. Drizzle with lemon juice. Serve topped with Cranberry-Honey Mustard Sauce. Try garnished with dill,if desired.
