1 tablespoon minced fresh thyme leaves
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
2 cups panko (Japanese breadcrumbs)
1 tablespoon grated lemon zest (about 2 lemons)
2 tablespoons olive oil
2 tablespoons butter, melted
1/2 cup whole-grain dijon mustard
1/4 cup honey
1/4 cup chicken broth (or vegetable broth)
8 chicken thighs, with skin (or 1 whole chicken cut into eighths)

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.

3 tablespoons honey

roughly 3/4 cup panko bread crumbs
1 tablespoon olive oil

  • Preheat oven to 425 degrees with the oven rack in the upper third. Line a baking sheet with parchment paper.
  • In a small mixing bowl, combine the dijon mustard, honey and mayonnaise. Set aside.
