One 9-pound bone-in spiral-sliced ham
1 cup honey
1/3 cup brown sugar
4 tablespoons unsalted butter
3 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
2 teaspoons finely chopped fresh thyme

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the ham in a small roasting pan, cut-side down, and pour 1/2 cup water into the bottom of the pan. Cover the pan tightly with foil. Bake until the ham is heated through, about 1 1/2 hours.
  • Meanwhile, combine the honey, brown sugar, butter, Dijon mustard, whole-grain mustard and thyme in a small saucepan. Cook over medium-low heat until the sugar has dissolved, about 2 minutes.
  • Increase the oven temperature to 375 degrees F. While the ham is still hot, remove the foil and carefully pour off the water from the roasting pan; it is fine if a little water remains. Brush about half of the glaze over the ham. Return to the oven, uncovered, for 5 minutes, until the ham is golden brown and beginning to glaze. Brush with the remaining glaze and bake for another 7 to 10 minutes, until the ham is well-browned and glazy; be careful not to let the glaze burn. Serve warm.

2 cups granulated sugar
1/8 teaspoon kosher salt
2 sheets puff pastry, defrosted (recommended: Pepperidge Farm)

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the sugar and kosher salt. Pour 1 cup of the sugar/salt mixture on a flat surface such as wooden board or marble. Unfold each sheet of puff pastry onto the sugar and pour 1/2 cup of the sugar mixture on top, spreading it evenly on the puff pastry. This is not about sprinkling, it's about an even covering of sugar. With a rolling pin, roll the dough until it's 13 by 13-inches square and the sugar is pressed into the puff pastry on top and bottom. Fold the sides of the square towards the center so they go halfway to the middle. Fold them again so the two folds meet exactly at the middle of the dough. Then fold 1 half over the other half as though closing a book. You will have 6 layers. Slice the dough into 3/8-inch slices and place the slices, cut side up, on baking sheets lined with parchment paper. Place the second sheet of pastry on the sugared board, sprinkle with the remaining 1/2 cup of sugar mixture, and continue as above. (There will be quite a bit of sugar left over on the board.) Slice and arrange on baking sheets lined with parchment.
  • Bake the cookies for 6 minutes until caramelized and brown on the bottom, then turn with a spatula and bake another 3 to 5 minutes, until caramelized on the other side. Transfer to a baking rack to cool.

¼ cup stone ground mustard
1 cup orange juice
10 whole cloves
10 lb picnic ham, cured
½ cup honey
½ cup dijon mustard
1 tablespoon worcestershire sauce
1 cup brown sugar

Steps:

  • Preheat oven to 400°F (200°C).
  • Add the chopped onion, garlic cloves, apple cider vinegar, mustard, orange juice, and cloves to a large roasting pan, stirring to combine.
  • Place the ham on the roasting rack over the liquid.
  • Trim off tough outer skin, then score the remaining fat in a crosshatch pattern. Cover the entire roasting rack with aluminum foil and bake for 1 hour.

300 gram(s) puff pastry
3 ounce(s) thinly sliced good quality ham
2 teaspoon(s) dijon mustard
2 teaspoon(s) honey - runny
1 ounce(s) parmesan cheese - grated
1 - egg yolk - beaten with 1 tbsp water

Steps:

  • Roll puff pastry out on a floured surface to form a rectangle 6 inches by 14 inches. Trim edges.
  • Mix the honey and mustard together and spread over the pastry right up to the edges
  • Pat the slices of ham dry and lay on top of the honey/mustard.
  • Roll along the long length of the pastry until it reaches the middle. Then repeat with the other side.
  • Cut into 1/2 inches slices. I measure and mark them first, and then slice. Lay slices on baking tray lined with greaseproof paper. brush with the egg yolk mixture and bake in a preheated oven 190C for about 10 minutes until just turning golden.
  • When cooked remove from oven, lace on cooling rack and sprinkle with parmesan whilst still hot. Once fully cooled these can be stored in an airtight container for up to 3 days. Crisp up before serving in an oven at 200C for 3 minutes.

Steps:

  • Adjust the oven racks to accommodate a large roasting pan and preheat the oven to 350 degrees F. Fit the pan with a shallow rack.
  • Unwrap the ham and rinse it in cold water. Place it on the rack in the roasting pan. Cover the pan with aluminum foil, leaving a 2-inch opening to allow steam to escape. Bake the ham for half the estimated cooking time, about 3 hours. (Total cooking time is about 20 minutes per pound.)
  • Halfway through the estimated cooking time, add the brown sugar and honey to a saucepan and cook over medium heat until the mixture is smooth and the sugar is dissolved. 1/2 cup honey
