Honey Dinner Rolls image

This honey dinner rolls recipe makes incredible fluffy, moist, pleasantly delicious and less sweet rolls compared to store-bought ones. This makes a perfect side dish for your holiday dinner.

4.5 c bread flour (prefer King Arthur unbleached bread flour)
1 tbsp instant rise yeast (prefer SAF red instant yeast)
1 tsp salt
2 c milk
3 tbsp honey
1/8 c sugar (add more if desired sweeter taste)
3.5 oz unsalted butter (melted)
1 egg
1 egg (beaten)
2 tbsp milk
2 tbsp honey
2 tbsp unsalted butter (melted)
vegetable oil (as needed)

Steps:

  • In a mixing bowl, whisk honey, milk and melted butter until honey has dissolved
  • Combine all dry ingredient in a bowl of a stand mixer fitted with hook attachment. On slow speed, slowly add milk mixture and egg and mix until the dough starts to come together. Scrape the side of the bowl down if needed.
  • Increase the speed to medium low and knead until the dough is smooth and starts to form a ball in the middle of mixing bowl. About 5-7 minutes. The dough supposed to be a little bit wet.
  • Flour your hands and lightly flour your counter. Transfer the dough onto the counter and knead by hand to form a smooth round ball.
  • Don't over work the dough. Transfer the dough seam side down in a lightly greased or lined with plastic wrap large mixing bowl. Cover the bowl with plastic wrap and let it rise for 1.5 to 2 hours or doubles in size. Whatever comes first.
  • Line your baking pan with aluminum foil with extra foil hanging over the edge of the pan. Spray or brush the foil with vegetable oil.
  • Punch or press down on the dough to deflate it. Transfer the dough to a lightly floured surface. Portion the dough into 2.5 oz pieces by rolling it into a log or cut each piece directly from the dough using bench scraper.
  • Working with 1 piece at a time. Remember to cover other pieces with plastic wrap to prevent them from drying out. Flour your hand before forming the dough.
  • Form the small dough into a ball by folding the edges toward center until a ball form. Then flip the ball seam side down, using your hand to make small circles on the counter with the ball until it is perfectly round.
  • Arrange the balls seam side down into 5 rows of 3 in lined baking pan. Cover loosely with plastic wrap and let them rise the second time for an hour or double in size. Whatever comes first.
  • In a small mixing bowl, combine egg wash ingredients and mix well.
  • Pre-heat oven to 350F.
  • Carefully brush the rolls with egg wash. Then bake them for 15 minutes. Rotate pan. Bake for another 10 minutes or until the top turns golden brown.
  • NOTE: the baking time and temperature is different from ovens to ovens. I use well calibrated convectional oven. If you are not sure how well your oven is calibrated, you can adjust the baking time by looking and the color on the top of the rolls after rotating. Reduce or add more baking time if needed. It should not exceed 30 minutes of baking.
  • Take baked dinner rolls out of the oven and let them rest for 5 minutes. Then brush them with honey glaze mixture. Using the foil to transfer them dinner rolls to serving dish.
  • Dinner rolls should be served warm or at room temperature.

I first made these in 2000. These are my favorite dinner rolls! I got the recipe out of a cookbook that famous country singers contributed to. This was sent in by Steve Wariner. You'll have no room for dinner after you start eating these! I make my rolls a bit bigger, so of course my yield is considerably less then recipe states.

4 1/4-4 3/4 cups all-purpose flour
1 (1/4 ounce) package active dry yeast
1 1/4 cups milk
1/3 cup honey
1/4 cup margarine or 1/4 cup butter
1 teaspoon salt
2 eggs

Steps:

  • Combine 2 cups flour and yeast in a large mixer bowl. Heat milk, honey, margarine and salt just until warm (115 to 120°F) and margarine is almost melted, stirring constantly. Add to flour mixture; add eggs.
  • Beat at low speed of electric mixer for 30 seconds; scrape sides of bowl constantly. Beat for 3 minutes at high speed. Stir in as much remaining flour as you can mix in with a spoon.
  • Turn dough out onto lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 mins). Shape into a ball. Place dough in a greased bowl, then turn it once. Cover dough and let rise in a warm place till double (about 1 hour). Punch dough down; divide in half. Cover again; let rest 10 minutes.
  • Cut each dough half into 18 equal pieces. Roll into balls, and place in greased 2 1/2-inch muffin pans. Let rise until doubled (about 30 mins).
  • Bake in a 375°F oven for 12 to 15 minutes. Remove from pan. Cool on a wire rack.
  • Makes 36 rolls.

A cousin in North Carolina gave me the recipe for these delicious honey-glazed rolls. Using my bread machine to make the dough saves me about 2 hours compared to the traditional method. 1 cup warm 2% milk (70° to 80°)
1 large egg, room temperature
1 large egg yolk, room temperature
1/2 cup canola oil
2 tablespoons honey
1-1/2 teaspoons salt
3-1/2 cups bread flour
2-1/4 teaspoons active dry yeast
GLAZE:
1/3 cup sugar
2 tablespoons butter, melted
1 tablespoon honey
1 large egg white
Additional honey, optional

Steps:

  • In bread machine pan, place the first 8 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed.), When cycle is completed, turn dough onto a lightly floured surface. Punch down; cover and let rest for 10 minutes. Divide into 24 pieces; shape each into a ball. Place 12 balls each in 2 greased 8-in. square baking pans. Cover and let rise in a warm place until doubled, about 30 minutes. , For glaze, combine the sugar, butter, honey and egg white; drizzle over dough. Bake at 350° until golden brown, 20-25 minutes. Brush with additional honey if desired.

3/4 cup water
1 large egg
3 tablespoons oil
2 tablespoons honey
2 1/4 cups unbleached all-purpose flour
3/4 cup whole wheat flour
2 tablespoons powdered milk
1 teaspoon fine sea salt
2 teaspoons active dry yeast
3 tablespoons melted butter
1/4 cup honey
1 1/2 tablespoons cinnamon
5 tablespoons melted butter
5 tablespoons honey
3 tablespoons powdered milk

Steps:

  • Make the dough in your machine on the Dough setting. (if you don't have a bread machine mix ingredients together in the order stated and then let rise, then roll out.).
  • Roll out the dough into a 12 X 16 inch rectangle.
  • Combine filling ingredients and spread over dough, leaving a narrow border all around. Beginning at one long side, roll into a cylinder and pinch seam to seal. Cut into 16 1-inch thick slices.
  • Butter a 9 X 13 inch pan. Combine glaze ingredients and pour into pan. Lay rolls on top of glaze. Cover and let rise 1 hour or until doubled.
  • Place the pan on a baking sheet (to catch any drips). Bake in a preheated 350 F oven for 25-30 minutes. Cool for 5 minutes. Invert onto a serving platter. Serve warm.
