1 chicken breast
parchment paper
2 tablespoons honey
1 tablespoon low sodium soy sauce
1 clove garlic, minced
1 lime, half for the juice, half for slices

Steps:

  • Preheat oven to 450°F (230°C).
  • Place bell peppers and onions into mixing bowl and thoroughly coat with olive oil, salt, and pepper.
  • Tear off a sheet of parchment paper, large enough to fold into a packet.
  • Mix honey, garlic and soy sauce.

1 chicken
1 onion, quartered
3 garlic cloves, peeled
1 lime, quartered
1/2 lime, juice of
1 teaspoon paprika
2 tablespoons honey
1 tablespoon olive oil
salt and pepper, to taste

Steps:

  • Preheat your oven to 200°C/400°F/Gas 6.
  • Rinse your chicken well, inside and out and dry thoroughly with a paper towel.
  • Stuff the cavity with the quartered lime, onion and the garlic.
  • Rub the olive oil all over the chicken and season with salt and pepper.
  • Place the chicken in a roasting tin and place in the middle of your preheated oven.
  • Roasting time depends on size of chicken.

2 tablespoons sugar
3 teaspoons sesame oil
1 chicken, 3 1/2 to 4 pounds
1/4 cup vegetable oil
1 tablespoon annatto seeds
2 tablespoons plus 1/2 teaspoon soy sauce
3 tablespoons honey
1 tablespoon lime juice

Steps:

  • In a small bowl, combine the pepper, salt, sugar and 2 teaspoons of the sesame oil. Rub the mixture over the skin and in the cavity of the chicken. Refrigerate the chicken for 1 hour.
  • Meanwhile, in a small saucepan, combine the vegetable oil and annatto seeds. Place over low heat and cook until the seeds begin to sizzle. Remove from the heat and set aside to cool. Strain, discarding the seeds, and stir 1/2 teaspoon of the soy sauce into the oil. Set aside.
